These Vegan Peppermint Bark Madeleines are sure to win over everyone's tastebuds this Christmas! Soft, delicious, dipped in dark chocolate and flavored with just a kiss of mint.
Happy Wednesday, friends! #ChristmasCookiesWeek continues today and I have another yummy treat for you! These Vegan Peppermint Bark Madeleines are seriously my new obsession and I couldn't wait to share the recipe. I'm not a huge mint person {see: literally the three mint recipes on this blog} but I am so happy with how these little madeleines turned out. Soft, fluffy, dipped in dark chocolate and with the perfect kiss of mint at the end! I promise these are lovely and not at all reminiscent of toothpaste, which is always what I'm afraid of! 😉
The sponsor I am showcasing today will probably sound familiar, as they were also a sponsor for Halloween Treats Week... Adams Extracts! I got to use their delicious peppermint extract for these madeleines, as well as their brand new ALL NATURAL food coloring! I was so excited when I heard we would get to sample these, as you know I'm always looking for more natural ingredients in my cooking. These colors are made using herbs and spices like turmeric, spirulina, and beets to achieve bright and pretty hues without artificial ingredients.
Don't forget that a big part of #ChristmasCookiesWeek is the GIVEAWAY! You can refer back to Monday's post to see all the prize details and to enter to win. It's so easy and there's so many great goodies for you! The other big part of themed weeks like this is that it's a huge blogger collaboration. So don't forget to check out everyone's recipes and share the love 🙂

What I made earlier this week for #ChristmasCookiesWeek: Vegan Frosted Sugar Cookie Bars
{Recipe adapted from Soy Division - thank you!}
vegan peppermint bark madeleines
Ingredients
- 1 cup all-purpose flour
- ⅔ cup white granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon salt
- 6 tablespoon aquafaba {chickpea brine}
- ⅔ cup melted vegan butter such as EarthBalance
- ½ teaspoon Adams Extract peppermint extract
- ½ teaspoon Adams Best vanilla extract
- red food coloring as desired
- *to decorate: dark chocolate crushed candy canes*
Instructions
- First, preheat oven to 375F and spray a madeleine pan with nonstick spray. Set aside.
- Place the vegan butter in a microwave-safe bowl, and heat in 20-30 second increments until melted and smooth. Set aside to cool.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In the bowl of a stand mixer fitted with the whisk, beat together the aquafaba and sugar for a few minutes, until foamy and fluffy.
- Add in the flour mixture a few spoonfuls at a time as the mixer runs, then slowly drizzle in the melted butter. Finally stir in the peppermint and vanilla extracts.
- Divide the batter into two bowls, and add red food coloring to one of them, mixing until the color is well-combined and bright.
- Add the madeleine batter to the prepared pan, alternating spoonfuls of red and white. Be sure to only fill each cavity ½ - ⅔ of the way. You can swirl the batter with a toothpick as well.
- Bake in preheated oven for 15 minutes, until madeleines are opaque and spring back when touched.
- Let cool slightly in the pan, then turn out onto cooling rack to finish.
- When ready to serve, dip in melted vegan chocolate and sprinkle on crushed candy cane pieces. Enjoy!
