Hi friends and happy Monday! You are in for a week of serious deliciousness. I have paired up with some bloggie friends for #HolidaySideDishWeek, where we are sharing scrumptious side dishes perfect for all your events and get-togethers of the season. Today, I am kicking things off with these creamy Vegan Maple Thyme Mashed Sweet Potatoes, which are vegan and gluten-free, require just a handful of ingredients, and couldn't be more delicious!
Since I'm your unofficial vegan(ish) best friend, of course I made it my mission to make all my recipes for the week... VEGAN! Findings good side dishes in the first place can be tricky, but plant-based sides? Forget about it. It's impossible. So I decided to make some goods that are not only 100% vegan, but also super simple and of course delicious. If your family isn't veggie, they won't even realize these are dairy-free. I promise! These mashed sweet potatoes are boiled in cashew milk so they're super creamy and smooth, and seasoned with maple syrup and earthy thyme for some extra deliciousness. They really aren't any more difficult than your standard mashed potato, I promise! Though if you want regular potatoes... I got those too (in vegan form)!

vegan maple thyme mashed sweet potatoes
Ingredients
- 3 large sweet potatoes
- 1 ½ cup unsweetened non-dairy milk {I used cashew}
- 2-3 tablespoon maple syrup to taste
- ½ teaspoon dried thyme
- 1-2 teaspoon salt
- 2 tablespoon vegan butter
Instructions
- First, prepare the sweet potatoes by washing and peeling them.
- Cut them into medium-sized cubes and place in a large pot.
- Pour the milk over the sweet potato pieces and add a pinch of salt.
- Bring the milk to a boil, then lower to a simmer, cover the pot, and allow the sweet potatoes to cook over medium-low heat until soft and falling apart. This should take 30-45 minutes.
- When the sweet potatoes are completely soft and mushy, use a potato masher to smooth them out, and season with the maple syrup, thyme, vegan butter, and any additional salt.
- Serve immediately!

Yum! Whipped this up in a pinch the other night to use some leftover, cooked sweet potatoes I didn't want to waste. Super easy and delicious and versatile and now I'm eating mash every night! Thanks!
