Hi friends and happy Monday! I am so excited to be pairing up with MorningStar Farms® again today to introduce an amazing new product to you guys, and share these Vegan Burger Sliders with Avocado and Eggplant Bacon! If you're gearing up for football season and want to {sneakily} add more veggie options to your spread, these are perfect. Tiny slider buns are stuffed with MorningStar Farms® Quarter Pounder Meat Lovers Vegan Burgers, avocado slices, lettuce, tomato, a smear of vegan mayo, and slices of homemade, smokey eggplant bacon. These bite-sized burgers are so delicious and you'll love them!
I am thoroughly obsessed with these new MorningStar Farms® quarter pound veggie burgers, and I had actually already tried them a few times before this campaign and LOVED them. When the opportunity came up to create a recipe to showcase them, of course I had to say yes. Throughout my #nomeat2018 journey, I have tried a lot of meat substitutes and veggie burgers, and I have found that I tend to prefer "vegetable" burgers over "fake meat" burgers. BUT. These MorningStar Farms Meat Lovers burgers are amazing! They are rich, flavorful, and the meaty texture is spot-on! They're not rubbery or chewy like some of the other vegan burgers I have tried. It's also super impressive that each patty packs a whopping 27g of plant based protein! Hamburgers, who?!
For this recipe, I ordered all my groceries through Walmart Online Grocery Pickup and simply ran by the store to pick everything up at my assigned time! I have done this a few times before and it's seriously so convenient. It's perfect for my busy school schedule! vegan burger sliders with avocado and eggplant bacon
Ingredients
- 4 MorningStar Farms® Quarter Pound Meat Lovers Vegan Burgers
- 12 slider buns
- 1 avocado
- 2 tomatoes
- 1 cup mixed greens
- ¼ cup vegan mayonnaise
- ¼ cup dijon mustard
- *for the eggplant bacon*
- 1 eggplant
- ¼ cup vegetable oil
- 2 tablespoon brown sugar
- 2 tablespoon liquid smoke
- 1 teaspoon salt
Instructions
- First, prepare the eggplant bacon. Peel the eggplant, slice thinly, and cut into slider-sized strips.
- In a deep dish, whisk together the vegetable oil, brown sugar, liquid smoke, and salt. Arrange the eggplant strips in the marinade and set aside for about 30 minutes.
- Meanwhile, prepare your slider toppings. Rinse and dry your lettuce, and slice your tomatoes and avocado. Spread some vegan mayonnaise and dijon mustard on each slider bun, and top with lettuce, tomato, and avocado.
- When ready to cook, prepare your MorningStar Quarter Pound Meat Lovers Vegan Burgers in a pan on the stovetop or on the grill. Cook until warmed throughout and with a crispy crust.
- While the patties cook, also cook your eggplant bacon. Arrange the bacon in a single layer in a frying pan, and cook until crispy, golden brown, and caramelized.
- Divide each patty in 3 equal pieces, and place a piece on each prepared slider bun. Top with a few pieces of eggplant bacon. Serve immediately!
