Hi friends and happy MONDAY! I am so excited to be participating in #CookoutWeek this year! During the next week, I am joining over 50 of my blogger friends to celebrate summer by posting delicious cookout-themed recipes. Today, I am kicking off the week by sharing this delicious, criminally easy Vegan Charred Caesar Salad with Crispy Chickpeas. I'm sure your first thought was, "How can a vegetarian really participate in a cookout week?" Turns out, it's actually super easy 😉 I focused my recipes this week on non-traditional things to grill, so everyone can join in on the fun even if they don't eat meat!
I've been meaning to make a grilled salad FOR EVER, and this was the perfect opportunity! This vegan {and gluten-free!} charred caesar salad is honestly so simple, but it's such a stunner and a total conversation starter. I'm sure your guests aren't expecting you to throw romaine lettuce on your grill, but don't knock it til you try it! You really just put your salad on there long enough for it to get some pretty grill marks and just barely char... you're not looking for your whole head of lettuce to wilt, I promise. 🙂 The light smokiness of the grill pairs perfectly with homemade vegan caesar dressing {which seriously takes 2 minutes} and crispy pan-fried chickpeas on top!

vegan charred caesar salad with crispy chickpeas
Ingredients
- 3 heads romaine lettuce
- ½ can chickpeas rinsed and drained
- 1 tablespoon olive oil
- ½ teaspoon italian herb mix
- ½ teaspoon garlic salt
- *for the dressing*
- ¼ cup vegan mayonnaise
- 1 teaspoon garlic powder
- 1 teaspoon nutritional yeast
- juice of ½ lemon
- ⅛ teaspoon soy sauce
- freshly ground black pepper to taste
Instructions
- First, make the dressing. In a small bowl, simply combine the vegan mayo with the lemon juice, soy sauce, garlic powder, nutritional yeast, and black pepper. Mix until well-combined and set aside.
- Next, prepare your crispy chickpeas. Heat the olive oil in a medium pan over medium-high heat. When the oil starts to shimmer, add in the chickpeas, italian herbs, and garlic salt. Cook, stirring often, for 5-10 minutes, until golden brown and crispy. Set aside until needed.
- Finally, prep your romaine lettuce. Rinse well. and cut in half length-wise to create 6 portions. Heat your grill to med-high. When ready to serve, place your romaine lettuce cut-side down on your grill. Cook for 2-3 minutes, until you have visible grill marks but before the lettuce starts to wilt.
- To serve, top charred romaine with the prepared dressing and crispy chickpeas. Eat immediately. Enjoy!
