While Frywall is fantastic for making messy, spattery foods like bacon and steak and tomato sauce, it's also excellent for cooking greens! I know you've all been there... you toss a huge bag of spinach or kale into a pot and before you know it, it has wilted down to nothing. Eep. Now, onto these tomato kale spaghetti! To be honest with y'all, we end up eating pasta at least every other night in my house. It's surprising how few recipes I have on here, considering the massive amounts of pasta we eat on the daily! These tomato kale spaghetti feature a quick and easy fresh tomato garlic sauce made with lots of olive oil and a big bag of kale to cancel out the carbs. Just make your sauce, toss in your freshly cooked spaghetti, sauté for a minute and - dinner is served.
Bonus! For all my vegan friends - this tomato kale spaghetti is vegan! The only non-vegan part is the parmesan on top, but simple enough to omit or sprinkle some nutritional yeast on top instead. Or your fav vegan parmesan! If you have a favorite, PLEASE tell me because as much as I love nutritional yeast, it ain't no parm. Ugh. One step at a time!

super simple tomato kale spaghetti
Ingredients
- 3 tablespoon extra virgin olive oil
- 1 pint cherry tomatoes halved
- 4 garlic cloves finely chopped
- 10 oz bag kale
- 1-2 teaspoon salt
- ½ teaspoon red pepper flakes
- ½ teaspoon garlic powder
- 1 lb spaghetti
Instructions
- First, prepare the sauce. In a large sauté pan, heat the olive oil and garlic over medium-high heat. Let garlic cook 30-45 seconds (be careful not to let it burn!), then add in the halved cherry tomatoes.
- Turn heat down to medium, season with salt, red pepper flakes, and garlic powder, and let sauce cook, stirring occasionally, until tomatoes become soft and saucy.
- Add in the bag of kale pieces, and continue to cook, stirring, until wilted and soft.
- Now, cook the spaghetti 1-2 minutes less than directed on the package.
- Drain the spaghetti and transfer directly to sauce pan. Turn heat up to medium-high and sauté until well-combined. You can add more olive oil as needed to coat all the pasta.
- Serve immediately with parmesan or nutritional yeast!
