First things first, you need to try Birthday Cake Oreos if you haven't already. THEY ARE AMAZING. Go to the store and buy two boxes. You will need less than one for this recipe but, uh, like I said, they are amazing, so you'll want a box of them to dunk in milk π But beware, they are addicting! Don't say I didn't warn you. Now, onto my newest creation... Birthday Cake Oreo Blondies! It is Oreo's 100th Birthday, so they have come out with these awesome limited-edition cookies and it seems like every single other food blogger out there has found them and loved them as well! I saw a couple of recipes with them in brownies and the like, so that got me thinking on what I could make... I did toy with the idea of making confetti cupcakes with oreos in the bottoms, but I just did that in my last post and I was afraid of doing too much of a good thing! I decided I didn't want to make Oreo-stuffed cookies because that's been done and overdone, and besides those would be total calorie bombs! I would feel bad eating one! I don't know about you guys, but I can't enjoy my dessert if I'm worrying the whole time about how big my butt is gonna get π Then, like I said, I had already seen some brownie recipes so I didn't want to do that either. SO, blondies! A mix between cookies and brownies, and full of sprinkles like confetti cake. Perfect compromise.
These are so easy, one-bowl (!!), and quick! And this recipe makes just one lil 8x8 pan, so you can make these without worrying too much about the damage that could happen π I have used this blondie recipe a bazillion times and it's so versatile and perfect for ANYTHING you wanna mix in there. That being said, they have never come out this flat for me before, so I think it may have had something to do with the "light" butter I used... oops! Learn from my mistakes, you should just use regular butter... it's only one stick anyways. But these were still really really good! π Sweeet, sugary goodness. Topped, of course, with birthday cake ice cream. I think there is an unwritten rule out there that states birthday cake oreo blondies must be enjoyed with a leeeedle scoop of blue birthday cake ice cream on top. π Enjoy!
Birthday Cake Oreo Blondies
Blondie recipe from SmittenKitchen
Yields: one 8x8 pan
8 tablespoon (1 stick) unsalted butter, melted
1 cup brown sugar
1 egg
1 teaspoon vanilla
1 pinch salt
1 cup flour (do NOT use whole wheat pastry because it will come out tasting wheat-y!)
about 10 Birthday Cake Oreos (all I had left was one sleeve, feel free to use more if you have them)

Preheat the oven to 350F, and line an 8x8 baking pan with parchment paper.
In a medium bowl, mix together the melted butter and brown sugar until smooth, then add in the egg and vanilla. Add salt and flour, and mix until well-combined. Break up the Oreos using your hands and dump them in the batter. Add in a generous amount of sprinkles, and mix it all up! Pour into your prepared pan, topping with more sprinkles and chunks of Oreo if desired. Bake 20-30 minutes, then let cool a bit before cutting. Serve warm topped with birthday cake ice cream and extra sprinkles!

Erin: I got my ice cream at Braum's! I think it may be only in Texas though, it's like a hamburger and ice cream place and you can buy cartons of their ice cream there... you should look it up though! All of their ice cream is amaaazing.
