Okay, so I'll be the first to admit it. I've definitely been going through a bit of a peanut butter phase! I shared that Peanut Butter & Jelly Crostata the other day, and now here is a Chocolate Peanut Butter Protein Mug Cake! And then in a few days I have something else coming up with the infamous chocolate + PB combo. I think it has something to do with the cold winter weather that has me craving rich, comforting foods and sweets. Which is why I came up with this healthy, post-workout-approved mug cake! But I mean, you can also eat it in your flannel pajamas as you watch Netflix, I don't judge.
This little baby is yet another recipe that was buried deep in my archives that deserved a makeover! I don't know how other people make pretty mug cakes, but let me tell ya. It's HARD. I thought this was ugly the first time because it was like, 4 years ago and I wasn't even trying to make it look good. But no, even now with my arsenal of food props and food styling knowledge, it was hard. I had to put whipped cream and chocolate chips and cocoa on it just so it would look palatable, okay? 😉 Not like those things hurt when you're trying to eat it either, but I was trying to keep this protein mug cake healthy. Every calorie counts and all that.
Going back to the point of the calories, I've been calorie counting for almost 4 months now so OBVIOUSLY I calculated the calories for this. If you're wanting a lighter snack, eating half of this protein mug cake{with the peanut butter shmear on top AND the chocolate chips} puts you back 173 calories, with 12 grams of protein which isn't shabby at all! If you're hungry enough and eat the entire thing {and again I don't judge}, that's about 350 calories which isn't terrible and you're still essentially eating a peanut butter lava cake. With 24 grams of protein! Am I advocating you eat this instead of an apple? Well, no. But sometimes the sweet tooth strikes and you need something that won't break the calorie bank. That's where this chocolate peanut butter protein mug cake comes in 🙂
chocolate peanut butter protein mug cake
Ingredients
- 1 scoop whey protein {vanilla or chocolate both work!}
- 1 tablespoon dark cocoa powder
- 1 tablespoon whole wheat flour
- ½ teaspoon baking powder
- 1 egg white
- 1 packet Stevia
- ¼ cup unsweetened almond milk or water
- peanut butter and dark chocolate chips for topping
Instructions
- In a large, microwave-safe mug, mix together all the ingredients except the toppings. Batter should be sticky and thick!
- Microwave for 45 seconds-1:30, being careful to NOT overcook! I recommend starting with less time and adding a little bit if needed. If overcooked, it will be rubbery.
- Serve immediately with peanut butter and chocolate chips on top!

Hehe, the struggle is real when it comes to photographing things like this. I think you did a fabulous job. I totally want to dig right in. I love that this is a healthier version of a mug cake, and I've never seen one that uses protein powder. That's such a great idea! It's definitely going on my to-try list.
