Happy Saturday, friends! There is nothing better to celebrate the weekend with than... chocolate, of course! And if the chocolate is in the form of Mascarpone Coffee Brownies, well... even better 😉 I've been obsessing with mascarpone lately, and this is just another recipe to add to the collection. It's so rich and creamy, and so versatile that you can stick it in almost anything and it'll improve whatever it is you're cooking. From bundt cake to chicken marsala to maple cream for your waffles... mascarpone's got your back!
Recently, my mom and I went shopping, and we found this amazing tiramisu mascarpone in the clearance section! We've never seen it in the regular dairy section, so how it got to be on sale is beyond us, but it's sooo good. Basically, it's just coffee mascarpone, which is something that lends itself especially well to desserts! Of course, this recipe can definitely be made with the regular stuff plus a little kick of espresso powder, but the tiramisu version makes these coffee brownies even more delicious.
Of course, since that mascarpone was on clearance, we totally stocked up which is part of the reason I've had SO many recipes featuring it lately! We grabbed a bunch of both the normal and the coffee versions, and I have had so much fun experimenting. This Chocolate Mascarpone Bundt Cake I made awhile ago is pretty awesome as-is, but use the tiramisu version of the creamy stuff and it's pretty much magical. These Mascarpone Coffee Brownies combine the perfectly matched dark chocolate and coffee with dreamy, creamy mascarpone for a rich and delicious treat! mascarpone coffee brownies
Ingredients
- 1 cup {2 sticks} unsalted butter
- ⅓ cup dark chocolate chips
- 1 cup sugar
- ½ cup dark cocoa powder
- ½ cup mascarpone cheese at room temp
- 3 eggs
- 1 teaspoon vanilla extract
- 1 tablespoon espresso powder
- ½ cup all-purpose flour
- ¼ teaspoon salt
Instructions
- Preheat the oven to 325F, and line an 8x8 baking dish with parchment.
- In a microwave-safe bowl, heat the butter and chocolate chips in 15 second intervals until smooth and melted.
- Stir in the sugar and cocoa powder, followed by the mascarpone cheese, eggs, vanilla, and espresso powder. Finally, add in the flour and salt.
- Pour the batter into the prepared pan, and bake for 40-50 minutes, until a toothpick inserted in the center comes out mostly clean. Bake slightly less for more fudgy brownies and more for cakey brownies. Serve with additional mascarpone cheese spread on top!

Hi Ashley! Thanks for your question! Yes, I used the tiramisu mascarpone and still added in the espresso. The coffee flavor in the mascarpone is pretty mild. 🙂
