After torturing you with such a long wait {unintentionally, I promise}, my recipe for Nutella-Swirled Banana Bread is finally here! I said something about it on Facebook a few days ago and everyone immediately freaked out. "Where's the recipe?" "When are you posting?" "How do you make it?" Hmm... seems like I need to make things with Nutella and/or banana bread more often. This was worth the wait, I promise!
This beauty is adapted from my Vegan Banana Bread recipe, meaning if you can get your hands on some vegan Nutella... this is totally vegan-friendly! Two bowls, two spoons, and no mixer. It doesn't get any easier than that! Next time you have ripe bananas and extra Nutella {HA} hanging around, I hope you think to make this! It's super fast and easy to throw together, the longest part is waiting for it to bake... and to cool. Sigh. Tough life we lead, right?
Nutella-Swirled Banana Bread
Ingredients
- for the banana bread
- 3 ripe bananas
- ¼ cup vegetable oil
- ¼ cup unsweetened almond milk
- 1 teaspoon vanilla extract
- ¼ cup white granulated sugar
- ¼ cup packed brown sugar
- 1 cup unbleached all-purpose flour
- 1 cup white whole wheat flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup Nutella
- for the streusel topping {optional}
- 4 tablespoon melted unsalted butter
- ½ cup unbleached all-purpose flour
- ⅓ cup packed brown sugar
- splash of vanilla
- pinch of salt
Instructions
- Preheat the oven to 350F, and spray a 9x5 loaf pan with nonstick spray. Set aside.
- In a medium bowl, mash the bananas with the oil, almond milk, and vanilla. Stir in the sugars until well combined, then add in the flours, baking soda, and salt, and mix until just combined.
- Transfer half the batter in a separate bowl, add in the Nutella, and mix until well combined.
- In a small bowl, prepare the streusel: combine all the ingredients and mix with a fork until small clumps form.
- Pour about half of the streusel mixture into the batter without the Nutella, and fold gently to combine.
- Using a spoon, dollop alternating spoonfuls batter into the prepared pan. With a clean spoon, place additional small dollops of Nutella across the top, then use a smooth knife to create swirls in the batter.
- Top the banana bread with the remaining streusel, then bake in your preheated oven for about 45 minutes, uncovered.
- If a toothpick inserted in the center still comes out gooey, cover the loaf with foil and bake for up to 20 minutes more. Let cool completely before slicing and enjoying!
