Hello, lovelies! Today, I am sharing your new summer obsession... spicy fruit salsa! This is definitely not one of those "dessert salsa" type of things where you eat them with cinnamon chips. No, no, this is meant to be eaten with salty, crispy chips and slathered on top of tacos. It combines sweet pineapple, mango, and strawberries with garlic, onions, jalapeno, and cilantro for a seriously perfect combination. Time to dig in!
While this salsa is definitely delicious as-is, it's actually part of this delicious carnitas recipe! All I have to say about this is TACOS. When I shared my idea with my boyfriend, he seemed pretty on board with it... his only comment was, "Don't put strawberries in there. Everything else sounds good, but strawberries are just weird." So, of course, that made me want to put strawberries in the salsa even more. That's just how it works! In all honesty, I'm glad I put the berries in there despite what he said, because the combination of sweet and spicy is seriously perfect. Sorry if berries in your salsa weird you out.
Also, small side-note... while I was planning on everything in this salsa being fresh, I actually ended up using canned pineapple tidbits! Partially because I hate cutting up pineapples with the fury of a thousand suns, but mostly because the juice is needed for the taco recipe! You use it as a marinade/cooking element. Trust me on this. If you buy canned, definitely save the juice! And if you use fresh, well... you might just need to buy canned pineapple juice regardless. sweet & spicy tropical fruit salsa
Ingredients
- 1 fresh mango
- 1 can pineapple tidbits {save the juice!}
- 5-6 fresh strawberries
- ½ onion
- 1 jalapeno
- 2-3 cloves of garlic
- juice of 1 lime
- handful of cilantro
- salt garlic salt, and cumin, to taste
Instructions
- First, rinse and dry all fruits and vegetables.
- Drain the canned pineapple, saving the juice. If desired, you can rinse the pineapple bits to remove more of the sugary juice. Shake all the excess liquid out, and place in a large bowl.
- Peel the mango and chop it into small cubes, adding these to the bowl.
- Chop the strawberries and onion, and also add these in.
- Cut the jalapeno in half, removing the ribs and seeds depending on how spicy you want your salsa, and finely chop.
- Finally, peel the garlic cloves, smash them, and finely chop these as well.
- Mix everything together in the bowl, and add in the lime juice and cilantro.
- Add the seasonings to taste. Serve immediately with chips or tacos, or refrigerate for later.
