You guys! I am seriously beyond thrilled to announce that I am the latest brand ambassador for Lavazza Coffee! Lavazza is Italy's most popular coffee brand, so being chosen as a representative is a huge honor! As y'all know, I'm full-blooded Italian {and I'm also a college student}, so coffee for me is basically its own food group. To kick things off, I whipped up this incredibly delicious Mocha Tiramisu. I based it off of my mom's fantastic recipe, but decided to make things a little richer by swapping the regular vanilla cream with a chocolate mascarpone concoction. I'm a firm believer that if a little chocolate is good, a lot of chocolate is great! This dessert combines espresso-soaked ladyfingers, freshly whipped cream, and cocoa-mascarpone cream to create a treat that's rich and satisfying while still being incredibly light.
I knew I needed a coffee with a strong, potent flavor if I wanted the mocha flavor to shine through the chocolate cream, so I chose to use Lavazza's Perfetto Espresso Roast. This roast is dark and flavorful, with a smooth velvety feel. I knew it would be perfect to offset the sugary ladyfinger cookies and rich creamy filling! To add onto the fun, I decided to make homemade mascarpone cheese for this particular batch of tiramisu...because I'm a crazy person. Just kidding! It was actually extremely easy, and you can find the super simple recipe I used right here. If you're not quite as insane as I am, store-bought mascarpone will work perfectly well.
And....MORE good news! Lavazza is incredibly generous, and since I loved their products so much, they agreed to send another gift package to one of you! If you're wanting to try out some delicious Lavazza coffee, simply enter this giveaway as many or as few ways as you'd like. You get a French Press coffee maker, 4 {count 'em, four!} bags of their different coffee roasts, a variety of Keurig cups, a ceramic mug, and a woven tote bag. Lots of caffeinated goodies for you if you win! Just use the Rafflecopter below to enter! 🙂 And even if you don't win, you can just visit Lavazza's website HERE and shop to your heart's content. Happy baking and good luck!
mocha tiramisu with Lavazza Coffee
Ingredients
- 3 dozen crisp ladyfinger cookies Savoiardi
- 8 oz. 1 small container mascarpone cheese, homemade or store-bought
- 2 egg yolks
- 2 cups Lavazza Perfetto Espresso Coffee with 2 teaspoon sugar at room temperature
- ½ cup 150 gr white sugar
- 2 tablespoon Marsala or Rum or pure vanilla extract
- 2 cups heavy whipping cream
- 4-5 tablespoon cocoa powder
- 1 oz dark chocolate grated
Instructions
- First, brew the Lavazza coffee so that it has time to cool to room temperature.
- In a large bowl, whisk together the egg yolks and sugar until the mixture becomes pale and light. Add in the alcohol or vanilla extract, and beat well. Add in the mascarpone cheese, and mix until no lumps remain.
- In a medium bowl, using a hand mixer, beat the whipping cream until fluffy and stiff.
- Using a spatula, gently fold the whipped cream into the egg and mascarpone mixture, being careful to not overmix.
- When mixture is smooth and well incorporated, add in the cocoa, 1-2 tablespoon at a time, until no lumps of cocoa appear.
- Grab a large serving dish, and place one layer of ladyfingers in it. Feel free to trim the cookies to fit! Using a spoon, thoroughly soak the cookies using the Lavazza coffee.
- Top cookies with a generous amount of chocolate cream, smooth it down using a spatula, and top with some dark chocolate shavings.
- Create another layer of ladyfingers on top, and repeat the process. Depending on the size of the dish, you should get 3-4 layers.
- Allow tiramisu to sit in the refrigerator for at least 24 hours before enjoying.
