Happy Saturday, friends! This week, I made this darling birthday cake for one of my friend's 20th birthday, and I just HAD to share it with y'all! I'm seriously, thoroughly obsessed with how cute it is. All she told me was that she wanted vanilla cake with chocolate frosting, and that she wanted it to say "Happy 20th Birthday" on it. And then... she let me go to town. This is what I came up with! It's a cake that's adorable in its simplicity, and whimsical with touches of bright colors! I wanted it to be nice, not sophisticated per say, but appropriate for a 20th birthday while still being fun. I think I nailed it! Oh, and because we all know at this point that my sprinkle addiction knows no limits... the inside of this is confetti cake. Sorry not sorry.
I won't give you a recipe, since none of the recipes I used are originals, but the cake is box-mix white cake made with milk instead of water, whole eggs instead of egg whites, melted butter instead of oil, and with the addition of some sprinkles and vanilla. The filling in-between layers is easy peasy chocolate ganache made with milk chocolate chips and heavy cream. And the frosting is this life-changing chocolate buttercream from Cookies & Cups. I made the white chocolate version for this Peppermint Bark Layer Cake, and the dark chocolate version for these Triple Chocolate Truffle Cupcakes. For this cake, I used milk chocolate. It honestly doesn't matter what kind of chips you use because this stuff is AMAZING. Like, wow let me make extra that I can eat with a spoon while I frost the cake-amazing. I've been a die-hard fan of Swiss Meringue Buttercream since... well, since I started blogging basically, and this frosting is basically just as good and light and fluffy and SO much easier. Ugh. Sorry. I'm getting carried away again.
The best part, as we all know, are the cake toppers! I have three words for you: Target, Target, and Target. I got those adorable straws and the hot pink candles in the party section, and I found both the scrapbooking stickers and the colorful twine in the dollar section. All I needed to add was some scrapbook paper to make some simple bunting and I was done. I seriously love making crafty cake toppers because A, they look super adorable, and B, they are so much better than attempting to write stuff with frosting. Have you ever tried to write something on a cake with frosting? Freaking impossible. Scrapbook paper and stickers, however? I've got that down to a science.
