Happy fall, y'all! So, is it official? Is the season of pumpkin finally upon us? I mean, I don't know why I'm even asking this question, seeing as I'm writing about pumpkin pancakes and sipping a homemade pumpkin spice latte... Whatever. I'm. So. Excited! Wheee! Fall is my absolute favorite season, though Christmastime is definitely a close second. I love the crisp air {except I live in Texas}, the crunchy leaves {except I live in Texas}, and being able to wear boots and leggings and cozy sweaters {except that's probably impossible for at least another month}. But I don't even care! You guys need to believe me when I say that any time I walk into a store and see their halloween and autumn decorations, I have a mini heart attack and want to buy them ALL. Give me everything!
So, to celebrate the best season of all, here are some pumpkin pancakes! Chocolate pumpkin pancakes. Pancakes that are healthy. Yay! Remember those Banana Protein Pancakes I wrote about not too long ago? This is kinda sorta the same recipe, except made with pumpkin and chocolate! Nomnomnom. Just like the others, these are super easy and guilt free. Unless you decide to pour fudge on them.... but then nobody has to know. I won't tell if you don't. Happy eating!
Chocolate Pumpkin Protein Pancakes
Adapted from the Banana Protein Pancakes
Yields: about 15 small pancakes
½ cup pure pumpkin puree
1 heaping scoop chocolate protein powder
1 cup flour {I did all whole wheat and they tasted wheaty, so I recommend doing half and half or all white}
1 cup unsweetened almond milk
1 egg
1 heaping teaspoon baking powder
1-2 tablespoon Stevia
Heat your pancake pan on medium, and spray with nonstick spray. Set aside for now. In a medium bowl, combine the pumpkin, milk, egg, and stevia. Add in the flour, protein, and baking powder, and mix until just combined. Cook on your heated griddle for a few minutes on each side. Serve immediately! Eat plain or with chocolate sauce on top. 🙂
