Happy Friday my beautiful friends! I don't know about where y'all live, but here in Texas it has been H-O-T hot!! Like, disgustingly so. I don't like to spend any time outside if I can help it cause it's just not enjoyable in the least. The small silver lining to this heat wave, however, is that we get to be creative with how we cool off and stay hydrated. And these gorgeous Watermelon Mint Frozen Margaritas are totally at the top of my list of beverages of choice! Refreshing, delicious, and oh-so-pretty. I have a feeling they will become your favorite too!
So, confession time. I had actually never made frozen margaritas at home before! Because I was intimidated of 1, making them and 2, measuring accurately so that you guys can replicate the process at home. I am happy to say that these watermelon mint frozen margaritas are so super simple to make! There is no need to be scared. I promise the small amount of work that goes into these is totally worth it!
How do I make watermelon mint frozen margaritas at home?
You do need to plan ahead of time if you want to whip up these watermelon margs at home! All in all though, everything is really simple.
- Cube and freeze the watermelon: this is crucial for your frozen margaritas! You will need two cups of diced frozen watermelon for the base of your margs. These give them the delicious watermelon flavor, but also help give the drinks a frozen "slushy" texture. And because the watermelon is frozen, we can use less ice which means our margaritas won't be watery.
- Make the mint syrup: this is 10000% optional BUT - if you have an abundance of mint like I do, it's a great way to use it up! Mint syrup is a fun addition for your cocktails and also goes well in some iced coffee. So you have some for now, and some for later! You can skip this step and use regular simple syrup or agave in its place (equal amounts).
- Make the mint sugar garnish: the fun rim totally makes the drink, in my opinion. I like to do a sugar rim for my margaritas, and in this case, I just muddled a couple of fresh mint leaves with the sugar to infuse some extra flavor.
- Throw it all in a blender and whip it up! Really, all you need to do to make the margaritas is combine the frozen watermelon, mint syrup, lime juice, tequila, triple sec, and ice in a blender. And... blend! Pour it up into your sugar-rimmed cups, and enjoy!

Ingredients
- *to make the mint syrup*
- ½ cup water
- ½ cup white granulated sugar
- ½ cup fresh mint leaves
- *for the margaritas*
- 2 cups diced watermelon frozen
- 1 cup ice
- 2 oz lime juice about 3 limes
- 4 oz tequila
- 1 oz triple sec
- 3 oz mint syrup see above - or substitute regular simple syrup or agave syrup
- 1 tablespoon white sugar + 2-3 mint leaves for rim
Instructions
- First, make the mint syrup if desired. Combine the water and sugar in a small saucepan, and add in the fresh mint leaves. Turn heat onto medium-high, and heat mixture until sugar dissolved, whisking often.
- Let syrup boil for 3-5 minutes, then turn heat off and remove pan from heat. Let syrup cool to room temperature, then transfer to a jar or bottle and refrigerate until needed.
- To make the margaritas, combine the frozen watermelon with the ice, lime juice, tequila, triple sec, and the mint syrup you made. Blend until smooth.
- To make the mint sugar, rub together the white sugar and mint until the mint is broken down into small flecks and has infused the sugar. When ready to serve, rub a slice of lime along the rim of your glasses, and dip them into the mint sugar.
- Divide frozen margaritas among your two cups, and enjoy! You can garnish with additional mint and fresh watermelon.

I saw this yesterday and have already made it - used agave instead of mint syrup since I pulled my mint earlier this year (it was taking over the garden). So refreshing and just the right amount of sweetness. My husband and I thoroughly enjoyed it while watching the kids play in the yard. And I have just enough for another batch tonight 🙂
