Hi guys and happy FRI-YAY! Today is the final day of #PumpkinWeek, and I have saved the best for last! It's just not fall for me without a few PSL's, and I am excited to share my own formula for The Best {and Easiest} Vegan Pumpkin Spice Latte! I actually have two versions... one is my weekday, running-out-the-door-and-gotta-be-as-fast-as-possible version, and the other one is a little more involved and perfect for weekends or a relaxing afternoon cup. Both are totally delicious and will fulfill those PSL cravings without breaking the bank. My secret ingredient is Torani's Pumpkin PIE syrup! It makes the coffee so flavorful with no effort at all. Let's go whip up some lattes!
You guys should be familiar with Torani, as I've worked with them a few times in the past! We collaborated for this yummy Vanilla Spice Hot Mulled Wine, as well as more recently with Iced Lavender Lattes and this Hard Cider Iced Tea last week. I was SUPER excited when I heard they were sending us pumpkin pie syrup because, while I'm truly not a hugeeeee sugary coffee person, I can't resist the pumpkin spice coffee. Call me basic, but it's true! Why do you think that bottle in the photos is literally already half empty? LOL. I am a big fan of the classic pumpkin spice syrup, and I was happily surprised when I tried the pumpkin pie syrup and realized I love this one even more! The pie variety is a little sweeter and more mellowed out by vanilla with the other spices in the background. The classic pumpkin spice is more robust in the spice department but still delicious. Honestly, either one will work fabulously in my pumpkin spice latte recipe!
Okay so here is a breakdown of the two recipes for you, since it's hard to combine recipes in one single recipe card!
Quick & Easy Pumpkin Spice Latte
- 1 cup fresh brewed coffee
- 1-2 tablespoon Torani Pumpkin Pie syrup, to taste
- ¼ cup nondairy milk (I love oat or soy for a richer flavor!)
How to: simply brew the coffee, and stir in the syrup and milk. Ta-da! You totally needed instructions for that, right? This is stupid-easy and how I've been making my lattes each morning before work!
Coffee Shop Style Pumpkin Spice Latte
- 1 cup fresh brewed coffee
- 1-2 tablespoon Torani Pumpkin Spice Syrup
- 1 tablespoon fresh pumpkin puree
- ¼ teaspoon pumpkin spice blend
- ¼ cup nondairy milk
How to: in the bottom of your coffee cup, combine the syrup, pumpkin puree, and pumpkin spices. Mix well to combine. Pour the coffee on top. Froth your milk using a brother or blender, and add to the coffee. Enjoy!
Alternative method: throw everything in a blender, blend until frothy, then pour into a cup. Either way will work just fine!

I hope you guys will give my pumpkin spice latte recipe a try! Both variations are delicious and sure to hit the spot without having to cough up $6+ at Starbucks (no, REALLY, that's how much it was last time I ordered one. Yikes!!).
Tips for success:
- You can use dairy or non-dairy milk, but either way I recommend a higher fat content for a richer, more luscious latte. If you drink dairy, go for whole milk or at least 2%. If you're doing dairy-free, soy milk is my absolute FAVORITE but oat or coconut will also be delicious!
- The quality of the pumpkin syrup matters! I know spending $8-9 for a bottle seems like a lot... until you realize that's literally 1.25 drinks from Starbucks. It's a small investment that will save you money in the long run!
- The pumpkin puree does tend to separate if the drink sits for too long, so be sure to stir periodically before drinking. The blending method does keep it from separating more!
