Happy Monday, friends! I hope everyone had a nice 4th of July weekend 🙂 I made these tarts to share with my family for the festivities, but they were so cute and tasty that I just had to share them with you too, even after the holiday! I am all about the easy desserts all summer long, honestly. These Bite-Sized Phyllo Berry Tarts combine itty bitty store-bought phyllo shells with a simple homemade vanilla pudding and fresh berries. They seriously could not be simpler!
So I happened to find these adorable ready-made phyllo tart shells at the store a couple of months ago on clearance for a STEAL. Legit just $0.29 for a pack of 15 😳 I wasn't sure what to make with them at first, but I knew I had to grab them and I would think of something later. They worked perfectly to make these itty bitty berry tarts! I found an easy recipe for vanilla pudding on Make It Dairy Free's page and whipped that up for the filling. Finally, all I had to do was top the tarts with berries and some sprigs of fresh mint from my balcony. Adorable and perfect for a sweet bite!
What do I need to make these phyllo berry tarts?
- Mini phyllo shells - I found these ready-made at the grocery store and they made these berry tarts SO simple to make. If you can't find them, you can also buy regular phyllo dough and make your own mini shells.
- Vanilla pudding - I made this super simple recipe from Make It Dairy Free, which only requires sugar, cornstarch, vegan milk, vegan butter, vanilla extract, and salt. I used vanilla bean paste to make it extra-delicious! In a pinch, you can use store-bought pudding mix, too. Jell-O brand is "accidentally vegan" and you can make the Cook & Serve kind with nondairy milk.
- Fresh berries - top these tiny tarts with whatever berries you like! I opted for the classic small berries - blueberries, raspberries, and blackberries. You could also use quartered strawberries on them!
- Fresh mint for garnish! Not necessary but it sure is cute 🙂 You could also top your tarts with a sprinkle of powdered sugar or cocoa powder.

bite-sized phyllo berry tarts
Ingredients
- *for the pudding*
- ⅓ cup sugar
- 2 tablespoon cornstarch
- pinch of salt
- 1 cup oat milk
- 2 tablespoon vegan butter
- 1 tablespoon vanilla bean paste
- *to serve*
- 30 mini phyllo tart shells
- 1 cup mixed fresh berries
- mint to garnish
Instructions
- First, make the pudding. In a small saucepan, combine the sugar, cornstarch, and salt. Whisk to get rid of any lumps. Mix in the oat milk and mix until smooth.
- Heat mixture over medium heat, whisking often, until it starts to thicken. Mix in the butter until melted and well incorporated.
- Remove the pudding from heat, and stir in your vanilla bean paste. Set pudding aside to cool slightly before using.
- When pudding is room temperature, divide it among your prepared phyllo cups. Top each tart with a few berries as desired. Serve immediately, or refrigerate until needed. Enjoy!
