Hi buddies and happy Fri-YAY! It's crazy to believe that a week ago today, it was one day til my wedding and I was running around like a chicken with its head cut off trying to make last-minute decisions. And now... all done! I really can't complain about being back to (mostly) normal though 🙂 Today, I am sharing this scrumptious Vegan Coconut White Chocolate Panna Cotta with you! You may remember I talked about the ongoing #FoodBloggerLove game a couple of months ago... I had picked my blog buddy Erin and made her chocolate hummus. I decided it was time for another round and picked a new blog friend to share with y'all!
The spotlight today is on our friend Nat who blogs over at Simple Family, Crazy Life! She runs a totally vegan blog, so I knew it would be fun to make something of hers since I'm always experimenting with plant-based cooking. A fun fact about her is that both she and her husband were born in the Soviet Union (more specifically Uzbekistan) and now live in Canada! She has been vegan for 4 years so she could definitely teach me a thing or two 🙂 She's relatively new to the world of blogging so you guys need to give her a warm welcome and show her website some love! Of course, with all those delicious dishes, leave it to the Italian to find the one Italian dessert 😉 I LOVE panna cotta and it has always been one of my favorite traditional Italian desserts! Panna cotta literally translates to "cooked cream" which doesn't sound very exciting - it's kind of a cross between a pudding and a flan, so it has a firm silky texture and can be flavored with whatever you want! Traditionally, it's vanilla and served with berries or chocolate sauce. I decided to use both in this case because, why pick!
I made just a couple of small changes from Nat's original recipe for this panna cotta! She uses soy milk, but I used a can of full-fat coconut milk instead to make it creamier 🙂 The other thing I changed is that she used agar agar flakes as her gelling agent, which I was not able to find. I used this Unflavored Vegan JEL which I found at Whole Foods! The main agent in this mix is carraggean instead. The instructions say to use it for two cups of liquid, so it worked perfectly in her recipe!

{panna cotta recipe adapted from Simple Family, Crazy Life}
vegan coconut white chocolate panna cotta
Ingredients
- 1 can full fat coconut milk
- ¼ cup cocoa butter
- 1 teaspoon vanilla extract
- 1 tablespoon agave syrup
- 0.3 oz packet of unflavored vegan gelatin
- *to serve*
- melted vegan chocolate
- fresh berries
Instructions
- To make the panna cotta, combine the coconut milk, cocoa butter, vanilla, and agave in a medium nonstick saucepan. Heat over medium until cocoa butter has melted and mixture comes to a gentle boil.
- Remove pot from heat, and slowly sprinkle in the vegan gelatin, stirring continuously.
- Divide the mixture among 4 ramekins, and refrigerate until set (3-4 hours).
- To serve, top the panna cotta with the melted chocolate and add fresh berries. Enjoy!
