Hi friends and happy Monday! I know everyone's hitting their slump on their New Year's resolutions right about now, whether that resolution was to eat healthier, do Whole30, Veganuary, or whatever it may be. Thankfully, I have just the thing to keep you going... and yes, it totally fits in your diet! I am super excited to share this project I did with LesserEvil snacks. I whipped up this scrumptious Banana, Hazelnut, and Dark Chocolate Popcorn Snack Mix using their Himalayan Pink Buddha Bowl Organic Popcorn! It is absolutely delicious, addicting, and... did I mention it only clocks in at around 100 calories per cup? Oh yes. This is snacking perfection!
When LesserEvil approached me about making a recipe with their yummy popcorn, I will admit I hesitated. It's already a perfect snack all by itself, so how could I possibly improve it?! This popcorn is organic, non-GMO, with no preservatives, or artificial colors & flavors. The only ingredients are organic corn {and that would be AIR popped, never fried}, cold pressed coconut oil, and Himalayan pink salt, so it's also naturally vegan and gluten free.
For this recipe, I decided to take inspiration from one of my other favorite snacks... bananas with chocolate-hazelnut spread! This snack combination is SO good, but sinfully full of calories and sugar which means it can't be enjoyed very often. However, the combination of banana chips, toasted hazelnuts, and dark chocolate worked perfectly to create an addicting popcorn snack mix! It has a perfect balance of sweet and salty, crunchy and creamy that makes you keep coming back for more.

banana, hazelnut, and dark chocolate popcorn snack mix
Ingredients
- 10 cups LesserEvil Himalayan Pink Buddha Bowl Organic Popcorn
- ½ cup dehydrated banana chips
- ⅓ cup hazelnut pieces
- ½ cup dark chocolate chips melted
Instructions
- First, toast the hazelnuts. Turn your oven on to broil, and place the hazelnut pieces on a baking sheet in a single layer.
- Place in oven and toast for 3-4 minutes, watching very carefully and shaking the pan a few times to get them evenly browned. Hazelnuts are ready when they smell toasty and have a light golden color. Set aside to cool.
- To prepare the popcorn mix, spread the popcorn on a single layer on a baking sheet. Sprinkle on the banana chips and the toasted hazelnut pieces.
- Pour the melted dark chocolate in a zip-top baggie, cut the corner, and drizzle it evenly over the popcorn mix.
- Allow chocolate to harden (about 10-15 minutes) then you can enjoy! Store popcorn snack mix in an airtight container to prevent popcorn from becoming stale.
