Hello buddies and happy Friday! Today is the last day of #ChristmasCookiesWeek... can you believe it?! It has totally flown by! In case you need a refresher, I shared these Vegan Frosted Sugar Cookie Bars on Monday, and Vegan Peppermint Bark Madeleines on Wednesday! For the grand finale, I am sharing these scrumptious Spiced Chocolate Cutout Cookies with Marble Glaze! Think crisp chocolate cookies but amped up with some cinnamon, ginger, cloves, and nutmeg. They taste warm and cozy and they're perfect for the holidays.
In my opinion, there are three types of bakers out there... the cake & cupcake bakers, the bread bakers, and the decorated cookie bakers. I, myself, am firmly in the first category which I'm sure doesn't surprise you. The patience required to make cutout cookies and pipe intricate designs on them just doesn't not exist for me. LOL. Which is why initially, I wasn't going to make a cutout cookie for this week at all, because I hardly EVER make them! But then I learned about this super easy marble frosting technique and I figured I just had to try it out. You know, for science. 😉
Believe me when I tell you these spiced chocolate cutout cookies are a cutout cookie hater's DREAM. The dough is so easy to make and wonderful to work with, doesn't have to be chilled for ages, and it cuts out so nice and pretty. The marble glazing is almost even better, because, get this. You literally just dip your cookie into the frosting.... let some excess drip off... and you're done. BLESS. No messing with piping bags or tips or drying times. It's 2018 and we just dunk our cookies in frosting now.

spiced chocolate cutout cookies with marble glaze
Ingredients
- *for the cookies*
- 1 ½ cups all-purpose flour
- ¼ cup cocoa powder
- ¼ teaspoon salt
- ½ teaspoon baking powder
- 1 teaspoon cinnamon
- 1 teaspoon powdered ginger
- ½ teaspoon freshly grated nutmeg
- ¼ teaspoon ground cloves
- ½ cup 1 stick unsalted butter, room temperature
- ½ cup brown sugar
- ¼ cup white sugar
- 1 egg
- *for the frosting*
- 3 cups powdered sugar sifted
- 3 tablespoon light corn syrup
- 4-5 tablespoon milk as needed
- 1 teaspoon vanilla extract
- Adams Best all-natural food coloring
Instructions
- In a medium bowl, whisk together the flour, cocoa, salt, baking powder, and spices. Set aside.
- In the bowl of a stand mixer, cream together the butter and sugars, beat until well-incorporated. Scrape down the sides and bottom of the bowl, then add in the egg, beating until the mixture is glossy and fluffy, about two minutes.
- Stop the mixer and add the dry ingredients all at once, then beat on low speed until incorporated. Finish mixing the flour in with a spatula if necessary. Dump the dough onto a large sheet of parchment paper, loosely shape into a rectangle, roll and refrigerate for at least two hours.
- Preheat the oven to 350F.
- Once chilled, roll out the dough onto a lightly floured surface.
- Cut out your desired shapes, then place on a baking sheet with a Silpat.
- Bake for 10-12 minutes, until slightly firm when touched. Let cool on the baking sheet before transferring to a wire rack. Let cool completely before frosting.
- When ready to frost, whisk together the sifted powdered sugar, milk, vanilla extract, corn syrup, and salt. Add more milk or powdered sugar as needed to reach the right consistency. It should be thick and glossy, but easy to dip a cookie into and have a smooth layer settle on top.
- Pour a small portion of the frosting into a shallow bowl, and add in a few drops of food coloring around. Swirl in slightly with a toothpick, and dip the top of the cookies in.
- As the food coloring gets mixed in and muddled, add more drops of food coloring, or make a new bowl with clean frosting. Repeat until all cookies are frosted. Add on some sprinkles at the end if desired.
- Let frosting dry for about 30 minutes undisturbed to harden before stacking or moving cookies.

That is literally the best icing method ever. I'm totally with you - not enough patience (nor a steady enough hand) to be piping icing onto cookies for hours. But this is an awesome method! Totally going to try it!
