Hi friends and happy Tuesday! I'm so sorry for the late start this week but yesterday was my PANCE exam! BLESS UP BECAUSE YA GIRL IS DONEEEE!! Now I just have to wait 2 weeks for my results ? No pressure. I am excited to be participating in a fun #YesYouCranberry event with some bloggie friends. I whipped up this Vegan Cranberry Apple Bundt Cake with Cream Cheese Frosting which is seriously SO good and perfect for both fall and Christmas. It's so simple to make, packed with fresh fruit, and incredibly delicious. I literally photographed this last night and it's already 90% gone. You could say it's been a success!
I am so pumped to be done with school {um... forever. YEAH.} so I can focus a little bit more on my blog projects! I really want to work on upping my Instagram game and maybe dabble in making some food videos. That's what I was thinking about last night as I was too nervous to sleep ? That's what I call #FoodBloggerProbz. But this cranberry apple bundt cake would be a great recipe to feature, because it's really easy to make, takes just a few simple steps, and it's made with some easy peasy vegan substitutes.
This vegan cranberry apple bundt cake definitely has a few extra yummy touches that I wanna talk about! First is this fantastic VEGAN cream cheese frosting that has me with MAJOR heart eyes ? I veganized my go-to cream cheese frosting 1:1 and it worked surprisingly well! I will say this version is a bit runnier than the original {you can see here the other one pipes beautifully} but a softer frosting definitely worked better for my purposes here. It's so simple to make, too! All you need is vegan cream cheese, vegan butter, powdered sugar, and some vanilla and almond extracts. I will admit that the Earth Balance flavor was actually a little strong for me here, so I would actually recommend using a flavorless shortening instead. I love this one from Spectrum! The other lovely touch is these sugared cranberries which could NOT be easier. I got the recipe from Jo Cooks!

P.S. this swirly pan is a little smaller than the standard pan and it did NOT fill up all the way... if you want a bigger cake, I would 1.5x the recipe!
vegan cranberry apple bundt cake with cream cheese frosting
Ingredients
- *for the cake*
- 2 tablespoon ground flaxseed + 6 tablespoon water
- 1 cup granulated sugar
- 1¾ cup all-purpose flour
- 1½ teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- ¼ cup vegan butter at room temperature
- ⅓ cup nondairy yogurt {I used Ripple}
- ¼ cup vegetable oil
- 1 tablespoon vanilla extract
- ½ teaspoon cinnamon
- ⅔ cup unsweetened nondairy milk
- 1 ½ cups fresh apple pieces
- 2 cups fresh cranberries
- *for the frosting*
- 8 tablespoon vegan butter
- 8 oz vegan cream cheese {I used Go Veggie}
- 1 lb powdered sugar
- 1 tablespoon vanilla extract
- ½ tablespoon almond extract
- pinch of salt
Instructions
- To make the cake, first preheat oven to 350F and spray a bundt pan with nonstick baking spray.
- In a small bowl, whisk together the ground flaxseed with the water and set aside to thicken.
- In the bowl of a stand mixer, combine the flour, baking powder, baking soda, cinnamon, salt, and sugar.
- Add in the vegan butter, and beat on low until it's incorporated and has a sandy texture.
- In a small bowl, whisk together the oil, flaxseed mixture, nondairy yogurt, vanilla extract extract, and add them to the dry ingredients. Mix until combined.
- Finally, pour in the unsweetened nondairy milk, and beat on medium-low until smooth and creamy.
- Add in the apples and cranberries and mix to combine.
- Pour batter into prepared pan and bake for 45-50 minutes, until cake is set in the center and a toothpick comes out clean.
- While the cake bakes, prepare the frosting. In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter and cream cheese until smooth and creamy.
- Mix in the almond and vanilla extract, then add in the sugar, a bit at a time, until fully incorporated. Vegan butter tends to be salted so taste before adding any extra salt!
- When cake is ready, let cool slightly in pan then flip out into a plate to finish cooling.
- Once cake is completely cooled, frost as desired and decorate with the sugared cranberries {recipe link above}. Enjoy!

Hi Patricia! You can sub the flaxseed + water mixture for two whole eggs, and switch out the vegan yogurt, milk and butter for regular yogurt, milk and butter 🙂
