Happy Wednesday, friends! I am so excited to be sharing this brand-new recipe with y'all today. I have created these scrumptious Vegan Chocolate Chai Pies, which are basically little bites of chocolate heaven. They pair perfectly with the new Reddi-wip® Coconut Non-dairy whipped topping! I am so pumped to tell you ALL ABOUT this delicious new vegan-friendly product. I'm absolutely obsessed. It has all of the goodness, and none of the dairy!
So, as you know, I have been trying to veganize my diet more and more this year, and trying to minimize my intake of dairy and egg products! As a dessert baker, nothing finishes a dessert quite like a fluffy dollop of whipped cream, but I've struggled a bit to find a suitable vegan substitute. Of course, you can always make coconut whipped cream from a can, but that takes time and planning (the can has to sit ALL night in the fridge completely undisturbed), and then you end up with a huge bowl of cream. What if you just need a little bit, right now? This new Reddi-wip® Non-dairy whipped topping does exactly that! It's just like the whipped cream from a can you grew up with... except with no dairy! I tried the coconut version (made with real coconut milk), but they have almond, too. These whipped toppings have NO dairy, gluten, artificial flavors, or artificial sweeteners.
I was so excited when I found the new Reddi-Wip Non-dairy whipped topping at Walmart! I have been hearing ~rumors~ about Reddi-wip coming out with a vegan option for almost a year, and finally finding it in stores just in time for the holiday season is just too perfect. You'll be able to top your pies, cakes, fruit, hot chocolate, really anything your heart desires, without worrying about the dairy (or gluten)! While you are at Walmart, be sure to grab the rest of the ingredients for these mini chocolate chai pies! Get some mini-pie shells in the frozen section (most are made with shortening and are naturally vegan), as well as dark chocolate chips, chai tea bags, and... the secret ingredient... a container of silken tofu! I promise it will all make sense in a moment.
These vegan mini chocolate chai pies come together in a snap! First, bake your mini pie shells according to package directions. If you want to make this a TOTALLY no-bake recipe, you can pick up mini graham cracker crusts instead! Just double-check the ingredients for any dairy or honey. To make the filling, melt together the chocolate and chai tea until creamy. In a food processor, combine your silken tofu, melted chocolate, and a splash of agave syrup and vanilla extract. Blend until super smooth and silky, and you are done!! Spoon your filling into your pie crusts, and enjoy! You can eat right away for a soft and creamy pie, or let it chill in the fridge for a couple of hours for a thicker, truffle-like filling.

Ingredients
- 12 frozen mini pie shells
- *for the filling*
- 1 lb silken tofu
- 12 oz dark chocolate chips {should be 1 bag}
- ¼ cup hot water + 3 bags of chai tea
- 1 tablespoon agave syrup
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- Reddi-wip Coconut Non-dairy whipped topping for serving
Instructions
- First, prick the bottom of the pie crusts with a fork, and bake according to package directions. Set aside to cool.
- Now, we make the chocolate filling.
- First, prepare the tofu by draining all the water from the package. Gently press a few paper towels to the surface to remove excess water.
- Next, heat ¼ cup of water and steep 3 chai tea bags in it for ~10 minutes, until dark and strong.
- Combine the chai tea and chocolate chips in a microwave-safe bowl, and heat in 20 second increments until smooth and creamy.
- In a food processor, combine the melted chocolate + chai, drained tofu, vanilla, agave syrup, and cinnamon. Blend until completely smooth and silky. It should look like thick pudding!
- Divide the pudding mixture evenly among the 12 pie crusts.
- Serve immediately or chill for a few hours before serving for a thicker filling.
- Enjoy topped with Reddi-wip Coconut Non-dairy whipped topping!
