Hi friends and happy Tuesday! Summer seems like it just flew by, didn't it?! I didn't have much of a summer since I was working the whole time anyway, but my Facebook feed has been flooded by first-day-of-school pictures so I know technically summer is already over. WAH. Where does the time even go?! Thankfully (or not), Texas will continue to be hot for a few more months which means recipes loaded with fresh summer produce are still fair game. Today, I am sharing this Vegan Blueberry Chocolate Chip Banana Bread which is, of course, a spinoff of my infamous vegan banana bread! Sweet, dense bread is studded with melty bittersweet chocolate chips and zesty pops of blueberries for a loaf that combines the best of both worlds. Who says you have to pick between chocolate and fruit desserts!
Okay but real talk, now that the end of school is near, I swear time is moving much faster than I thought possible. I just spent 2 months at a family practice clinic and it honestly feels like it was only a couple of weeks. We got to apply for graduation yesterday and I am now eligible to take my boards. MY BOARDS. TO BECOME A REAL PA. I may or may not be having a bit of a quarter-life crisis over here. Don't mind me. The good news (terrible news) is that I am definitely a stress eater, and this blueberry chocolate chip banana bread is a great distraction from the fact I'm about to be released into the wild. IT'S FINE I'M FINE DON'T TALK TO ME.
I digress. Let's talk about chocolate and fruit together! Some people are into it, some people aren't, and while I personally love both chocolate and fruit individually, when you combine them under just the right circumstances, some magic is bound to happen! Blueberries and chocolate are not the most traditional of combos, but why not?! The sweet, earthy blueberries work so well with the edge of bitterness of chocolate. It's really no different than chocolate with strawberries or raspberries!This rich, dense banana bread just happens to be the perfect vehicle to combine the two!

vegan blueberry chocolate chip banana bread
Ingredients
- 4 medium ripe bananas
- ¼ cup vegetable oil
- ¼ cup nondairy milk
- ½ cup light brown sugar
- 2 teaspoon pure vanilla extract
- 2 cup unbleached all-purpose flour
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup vegan chocolate chips
- 1 cup fresh blueberries
Instructions
- Preheat the oven to 350F. Spray a 9×5 loaf pan with nonstick spray, then flour.
- In a large mixing bowl, roughly mash the bananas. Add the brown sugar, oil, vanilla, and almond milk, and whisk to incorporate.
- Sift in the flour, baking soda, salt, and cinnamon, and use a wooden spoon to mix. Finally, stir in the chocolate chips and blueberries.
- Transfer the batter to your prepared pan and smooth the top.
- Bake for about 45 minutes, then cover with foil and bake for 10-15 minutes longer, until a toothpick inserted in the center comes out with just a couple crumbs.

Has anyone tried replacing the oil (vegetable or coconut) with apple sauce?

I don't think anyone has on this specific recipe but I have gotten good reviews with applesauce on the original banana bread! I would just be cautious with the blueberries as you don't want the bread to come out too soggy 🙂

Hi Cynthia! I do not bake GF so I am not sure if it would work out. My worry is that it would come out too dense and glue-y!
