Hi frans and happy tuesdaaaaay! New month means new rotation for me, which unfortunately means I am all done working at the children's hospital (for now). WAH. Take me back! Thankfully, I have something delicious to take some of the sting off a new work week. These Vegan Cherry Pistachio Chocolate Chip Cookies take the classic choco chips and elevate them thanks to roasted/salted pistachios and dried cherries. The combination of sweet and salty, chewy and crispy is absolutely irresistible! YUM.
For this cherry pistachio chocolate chip cookies, I actually just referred back to my trusty original vegan cookie recipe. It's quite similar to a traditional cookie, but I just swap out the butter for vegan butter/shortening, and the eggs for a few spoonfuls of aquafaba. The rest is exactly the same as it would be for your standard chocolate chipper! I seriously love recipes like this because they show that vegan food really doesn't have to be difficult. If you can make normal cookies, you can make vegan cookies. I promise!
I won't lie to you, these vegan cherry pistachio chocolate chip cookies are seriously SO easy to make. You just whip up your cookie dough all in one bowl and stir in the toppings. Then, you can choose your own adventure. If you want thin cookies that are crisp at the edges and chewy in the middle like these, you can bake right away. If you want cookies that are thicker and doughier in the middle, just let the cookie dough hang out for about 30 minutes before you scoop and bake. Either way, these cookies are going to be your new favorites. They are just so yummy!

vegan cherry pistachio chocolate chip cookies
Ingredients
- ½ cup vegan butter or shortening {I like EarthBalance and Spectrum}
- ¼ cup white granulated sugar
- ½ cup packed brown sugar
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
- 3 tablespoon aquafaba {chickpea liquid}
- 1 cup + 2 tablespoon all purpose flour
- ½ cup chocolate chips {I like Guittard extra dark}
- ½ cup roasted/salted pistachios roughly chopped
- ¼ cup dried cherries
- *1-2 teaspoon nondairy milk ONLY if you are using shortening*
Instructions
- Preheat oven to 350F, and line two cookie sheets with parchment or silicone liners. Set aside.
- In the bowl of a stand mixer fitted with the paddle attachment, combine the EarthBalance/shortening and sugars, and beat until creamy.
- Add in the baking powder, baking soda, salt, vanilla, and aquafaba, and beat until fluffy and well-incorporated. Add in the nondairy milk if you used shortening.
- Stir in the flour, followed by the chocolate chips, pistachio pieces, and cherries.
- Bake immediately for flatter, chewier cookies, or place dough in fridge for about 30 minutes for thicker cookies.
- Bake at 350F for 14-15 minutes, until golden brown and delicious.
