This Rainbow Layered Birthday Cake is the perfect special dessert for a little girl's birthday! It's covered in a myriad of colored frostings and topped with its very own rainbow made out of fondant.
Hiiiii friends and happy Thursday! Sorry I've been ignoring y'all a bit this week. School has been super busy and I'm on a new program with my personal trainer so, between those two things, I have had very little time for cooking and blogging and fun things. OH, and I'm also in the midst of wedding planning which to be honest, SUCKS. I swear the Pinterest planning is the best part. Playing email tennis with vendors and trying to schedule appointments... not so much. BUT. I digress. Today I am sharing this fabulous Rainbow Layered Birthday Cake I made not too long ago for an order! It's super bright, colorful, and just straight up fun. I'm obsessed!
There is nothing that I love MORE than a repeat customer, and this was actually for the same little girl I made the My Little Pony cake for last year. Happy 5th birthday, Madelyn! 🙂 There's nothing more perfect for a little one's birthday than this monstrosity covered in a rainbow of frosting and topped off with a matching fondant rainbow. SO cute and bright! And, dare I say it... not that difficult to decorate. I thankfully already had some practice with that rainbow last year, so at least I knew where to start there!
Alright, so let's break down this rainbow layered birthday cake so that if you really, REALLY want to make one yourself... you hopefully can. I definitely don't track my order recipes as well as my blog-specific recipes 😉 The bottom of this cake is three 8" marble cakes, and the top is two 5". The whole thing is covered in cream cheese frosting which was colored 6 different shades for the rainbow effect! You can find a myriad of tutorials online that explain the petal effect much better than I can, but basically just use a large round tip - pipe a little dollop of frosting on your cake - and use an offset spatula to press and drag away to create the flat petal. And then, repeat repeat repeat ad infinitum. It's not hard, it just takes a bit of patience 😉
The rainbow, clouds, and stars are all made of fondant {and I buy mine premade from Hobby Lobby to preserve my sanity}. As for the butterflies, these are actually super neat! I got them from Hobby Lobby as well and they are just edible paper. So they are super light and very easy to bend as needed. They were the perfect finishing touch for this rainbow layered birthday cake!
