These tender, delicious Blackberry Lime Cream Cheese Scones are so simple to make, and packed with fresh berries and citrus!

So - let's talk about vacation! I had two blissful, much-deserved weeks off of school for spring break, so it was only fitting that I finally bounced town and went somewhere fun. The fiancé has just finished his classes for medical school, which meant somehow the planets aligned and we had the same vacation time! Yessss. We went cruising around the Caribbean which was SO much fun! We went to Cozumel, Grand Cayman, and Jamaica. Y'all, those beaches are absolutely dreamy. The water is so clear and turquoise it looks like a pool! And the food was so good on the cruise, too. I have lots of recipe ideas to share with you guys! But okay so - back to these blackberry lime cream cheese scones. Kind of a long name, I know, but it's all necessary! These scones start with an easy peasy basic dough recipe that gets jazzed up with lime juice, lime zest, fresh juicy blackberries, and chunks of melty cream cheese. SO yum. And they aren't terribly sweet, which means they are perfect with a drizzle of honey or a smear of jam. Or just enjoy them all by themselves with a big mug of milky tea. Perfection!

blackberry lime cream cheese scones
Ingredients
- 2 ½ cups flour
- 3 tablespoon granulated sugar
- 1 tablespoon baking powder
- ¼ teaspoon salt
- ½ cup {1 stick} unsalted butter cold and cut into small cubes
- 1 pint fresh blackberries
- 2 tablespoon fresh lime juice
- zest of 1 lime
- 2 eggs
- ½ cup heavy cream
- 4 oz cream cheese
- *for topping: heavy cream turbinado sugar
Instructions
- First, preheat oven to 400F. Line a baking sheet with silicone or parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Add in your cubes of cold butter, and using a pastry blender, mix in until the mixture resembles coarse sand.
- Add in the lime juice, lime zest, and blackberries, and toss gently to combine.
- In a small bowl, whisk together the eggs and heavy cream and add into the dough. Mix until it comes together.
- Finally, add in the cream cheese in small pieces, mixing until JUST combined (you want the cream cheese to stay in chunks throughout the dough!)
- Generously flour a clean working surface, knead the dough a few times, then gently pat into a circle about 1 inch thick. Cut with a biscuit cutter, or into triangles like traditional scones.
- Place scones on prepared baking sheet, then brush with the reserved heavy cream and sprinkle on the turbinado sugar.
- Bake for 15 minutes, until puffy and golden brown. If the tops are a little pale, you can carefully broil for 1-2 minutes until a bit more golden. Enjoy warm!
