Hello friends and happy Monday! I am so excited to have paired up with Silk today to bring you this fantastic recipe - Baked Vanilla Donuts with Strawberry Glaze! I absolutely love Silk and use their products on the daily, so I was only too happy to create this recipe for them 🙂 These tender donuts are made with almondmilk and almond dairy-free yogurt alternative, flavored with vanilla, and topped with a fantastic sweet glaze made with freeze-dried strawberries! The color and "sprinkles" are all-natural, so no food coloring here 🙂 Let's go make some treats!
So to get the ingredients for this recipe, I tried something new... Walmart Online Grocery Pickup! It was SO simple to do! I just used the app to make my grocery list, chose a convenient time for me to go pick everything up, paid, and that was it. Then, I just pulled up to the Walmart Pickup area at my assigned time and an employee brought my bags out! Everything was just as ordered and all my refrigerated items were nice and cold. To be honestly, probably colder than when I grab them and then wander the store for 45 min 😉 And - BONUS. Be sure to hold onto your receipt so you can claim this awesome rebate offer from Ibotta!
To make these baked vanilla donuts, be sure to include Silk Unsweetened Almondmilk, Silk Vanilla Almond Dairy-Free Yogurt Alternative, flour, sugar, powdered sugar, vanilla extract, vegan butter, oil, and a can of chickpeas {trust me!} to your Walmart online grocery list. Also add a bag of freeze-dried strawberries if you store has them in stock! I am also asking you for one special piece of equipment here - a donut pan. If you don't have one, don't worry! These can be made in a muffin pan as well!
So - why choose Silk? baked vanilla donuts with strawberry glaze {vegan/soy-free}
Ingredients
- 1 cup granulated sugar
- 1¾ cup all-purpose flour
- 1½ teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- ¼ cup soy-free vegan butter at room temperature
- ½ cup aquafaba {chickpea brine}
- ⅓ cup Silk vanilla almondmilk yogurt
- ¼ cup vegetable oil
- 2 tablespoon vanilla extract
- ⅔ cup Silk unsweetened vanilla almondmilk
- *for the strawberry glaze*
- ¼ cup dehydrated strawberries
- 2 cups powdered sugar
- ¼ cup Silk unsweetened vanilla almondmilk
Instructions
- Preheat the oven to 350F, and spray a donut pan with nonstick spray.
- In the bowl of a stand mixer, combine the flour, baking powder, baking soda, salt, and sugar.
- Add in the vegan butter, and beat on low until it's incorporated and has a sandy texture.
- In a small bowl, whisk together the oil, aquafaba, Silk almondmilk yogurt, and vanilla, and add them to the dry ingredients. Mix until combined.
- Finally, pour in the Silk unsweetened almondmilk, and beat on medium-low until smooth and creamy.
- To easily fill the donuts, pour batter into a zip-top bag and cut off a corner. Pipe the donut molds about ⅔ full.
- Bake for 14-15 min, until donuts are puffy and a toothpick inserted in the center comes out clean.
- While the donuts cool, make the strawberry glaze. First place the dehydrated strawberries in your food processor and pulse until they become fine powder.
- In a shallow bowl, whisk together the powdered sugar and strawberry powder. Slowly add in the almondmilk until you reach a thick, smooth consistency {think like honey!}. You may not need all the almondmilk.
- Once donuts have cooled off, dip the tops into the prepared glaze, and place on a cooling rack so that the excess can drip off. Enjoy!
