Hello friends and happy Tuesday! I'm so excited to be sharing this super easy recipe with y'all today. One of my self-imposed resolutions for the year is to post more real food, and meal prep-friendly food at that! According to my Instagram poll I had done, you guys totally agree with the plan. This Vegan Sausage Sheetpan Meal has sweet potatoes, kale, and mushrooms for a hearty, winning combination. And the best part - minimal prep, it's all in one pan, and it's ready in less than 30 minutes. Oh yeah. Dinner is served!
So in general I am not a big sheet-pan-meal maker, just because I haven't really found any that speak to me. I also feel like a lot of the time, the sheet pan technique doesn't save any time or work so I haven't been especially inclined to make them. This vegan sausage sheetpan meal though, I am in love with! There's lots of recipes using "normal" sausage out there, per se, so I figured it would be super simple to veganize this just by using vegan sausages! And... I was right! If you're playing for the other team and you're just wanting meat instead, you can easily just sub the sausage out for your favorite. It's so simple either way. 🙂
For this recipe, I really just combined my favorite winter veggies with some olive oil and seasonings, added in veggie sausages, and threw the whole thing in the oven. Let it hang out for about 25 minutes and that's it! While it's in the oven, make yourself a pot of quinoa or brown rice for a side and you'll be all set. This vegan sausage sheetpan meal is great for an easy dinner but also perfect for meal-prepping! And side note - something I wanted to touch on was the ever-popular adage that vegan food doesn't have any protein. Listen, these Tofurkey sausages have 30 grams of protein each (!!!), which is actually more than the average Italian sausage link (Google tells me they average at 16g). So you can't tell me nothing. Eat your veggie sausages and feel good about your choices. 😉

Ingredients
- 4 Italian sausages {use your favorite vegan/vegetarian/meat}
- 1 large sweet potato cut into small cubes {about 2 cups}
- 2 cups chopped kale
- 1 cup halved mushrooms
- 1-2 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon Italian seasoning
Instructions
- Preheat oven to 400F.
- Line a baking sheet with foil. Place the sweet potato, kale, and mushrooms on the sheet, and toss with the olive oil, salt, and seasonings.
- Add the sausages on the pan, and bake for 20-25 minutes, until sweet potatoes are soft and sausages are cooked through.
- Serve immediately with a side of quinoa or brown rice.
