Happy, happy last day of 2017 friends! It has been such a fun year with y'all and I can't wait to see what 2018 has in store for us! To send the year off in style, I made this gorgeous Sparkling Champagne Bundt Cake. It's a delicious, tender butter cake with champagne in the batter, soaked in a sugar & champagne syrup, and topped with a sweet little drizzle of champagne frosting. The whole thing is, predictably, topped off with sparklers! Because, New Year's. I had to do it. 😉
This year has by far been the best yet for this little blog of mine and it's all thanks to you guys! I am seriously so appreciative of all the views, likes, comments, and feedback I've gotten from y'all. Every sweet comment you leave on my site just makes my day! When you guys make my food and post pictures... oh man. It totally makes my month. It just makes me so happy to see that my recipes are actually made by like, real people out there.
Okay but back to this champagne bundt cake! As y'all have probably noticed, bundt cakes are kind of my thing, so it only seemed fitting to finish off the year with my signature dessert! The best part is that this cake is totally easy, despite having a few different elements and components. Just bake your cake, brush with the champagne glaze, and drizzle on the frosting at the end to finish it off. You could also add on some sparkly sprinkles for a finishing touch! I actually stirred in a generous handful of gold sprinkles in the batter but it looks like they just melted and made the cake more yellow. ?

sparkling champagne bundt cake
Ingredients
- *for the cake*
- 2 cup granulated sugar
- 3 ½ cup all-purpose flour
- 3 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- ½ cup {1 stick} unsalted butter softened
- 4 eggs
- ⅔ cup sour cream
- ½ cup vegetable oil
- 1 tablespoon vanilla extract
- 1 ⅓ cup champagne
- *for the glaze*
- ¼ cup champagne
- ¼ cup granulated sugar
- *for the frosting*
- 1 cup powdered sugar
- ¼ cup champagne
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350F, and spray a bundt pan with baking spray {or use butter & flour}.
- In the bowl of a stand mixer, combine the flour, baking powder, baking soda, salt, and sugar. Add in the butter, and beat on low until it's incorporated and has a sandy texture.
- In a small bowl, whisk together the oil, eggs, sour cream, and vanilla, and add them to the dry ingredients. Mix until combined.
- Finally, pour in the champagne, and beat on medium-low until smooth and creamy.
- Pour the batter in the prepared bundt pan, and cook for 50-60 minutes, until a toothpick inserted in the center comes out clean with a few crumbs. Set aside to cool slightly, then turn out onto a serving platter to finish cooling.
- Next, make the glaze. In a small pot, combine the sugar and champagne and heat over medium heat. Whisk often until sugar is completely melted and allow to boil for 3-4 minutes. Set aside to cool to room temp before using. Using a pastry brush, brush the cake evenly 2-3 times with the glaze until cake is moist and soaked through.
- Finally, make the frosting. In a small bowl, whisk together the champagne and vanilla extract. Add in the powdered sugar a little at a time, whisking to be sure the frosting stays smooth. When done, drizzle liberally on cake. Top with sprinkles, if desired. Enjoy!

Hi Laura! You can absolutely make this cake with a hand mixer - I've honestly made similar cakes with just a whisk and they come out just as well! No adjustments should be needed in this case 🙂 Happy baking!
