Happy, happy FRIDAY! I am so excited to be officially done with my surgery rotation, which means I'm now on a two week break! Yesssss. I have a few super cute Halloween recipes lined up for y'all in the next few days, starting with these adorable Halloween Marble Cupcakes with Dark Chocolate Frosting. Classic vanilla cupcakes are jazzed up with festive food coloring, topped with deep dark chocolate frosting, fun sprinkles, and colorful plastic spider rings! I'm telling y'all, the Target dollar section at halloween is really the best thing in my life. Anyway. Let's make cupcakes!
SO what are y'all doing for Halloween? Throwing a party, taking the kids trick-or-treating, going out? I'll be in PARIS!! We are going to Disneyland Paris the day before Halloween since we figured the day-of would be super crowded, but I think it'll be super fun regardless! I am making us some Disney princess inspired Minnie Mouse ears and I'm hoping to have the tutorial up soon so that y'all can make some too. They'll be so cute!
I am notoriously SO bad at posting Halloween recipes for some reason! I always have all these ideas, but the early fall season just always gets me. And then it's like... when is it too soon to post? When is it too last-minute for people to actually make the recipes?! Being a food blogger is complicated, okay. Thankfully... these adorable halloween marble cupcakes are not! While they look impressive, they're all made with one vanilla cake batter that gets divided and mixed with different colors. The frosting is made with dark cocoa so that you can use the least amount of black food coloring possible. If you wanted, you could probably leave it out altogether and still look perfectly festive.

Halloween marble cupcakes with dark chocolate frosting
Ingredients
- *for the cupcakes*
- 1 cup granulated sugar
- 1¾ cup all-purpose flour
- 1½ teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ¼ cup {½ stick} unsalted butter softened
- 2 eggs
- ⅓ cup sour cream
- ¼ cup vegetable oil
- 1 tablespoon vanilla extract
- ⅔ cup whole milk
- green orange, and purple food coloring
- *for the frosting*
- 3 ½ cups powdered sugar
- ½ cup dark cocoa powder
- 1 cup 2 sticks unsalted butter, softened
- ¼ cup heavy cream more or less as needed
- ¼ teaspoon vanilla extract
- pinch of salt
- black food coloring
- sprinkles and plastic spiders to decorate
Instructions
- Preheat the oven to 350F, and line a muffin pan with 12 cupcake liners.
- In the bowl of a stand mixer, combine the flour, baking powder, baking soda, salt, and sugar. Add in the butter, and beat on low until it's incorporated and has a sandy texture.
- In a small bowl, whisk together the oil, eggs, sour cream, and vanilla, and add them to the dry ingredients. Mix until combined.
- Finally, pour in the milk, and beat on medium-low until smooth and creamy.
- Divide the batter evenly between 3 bowls, and color one green, one orange, and one purple.
- Split the batter evenly among the prepared liners, alternating colors as you layer. Using a toothpick, swirl the colors gently to create a marble effect.
- Bake for 15-17 minutes, until a toothpick inserted in the center comes out with just a few crumbs. Let cool completely before frosting.
- To make the frosting, beat the butter until creamy in the bowl of a stand mixer fitted with the whisk attachment,
- Add in the powdered sugar, one cup at a time, followed by the cocoa and cream. Add more or less as needed to get the right consistency
- Stir in the salt and vanilla, and add food coloring as desired.
- Decorate the cupcakes with a 1M tip, top with sprinkles, and top with a plastic spider.
