Hiiiii, friends! Sorry for ghosting on y'all last week. I missed you! I am back with this super fun and deceivingly easy recipe today that will blow your mind! Have you ever heard of a Dutch baby?! This oven pancake is made with a super easy blender batter that gets poured into a hot cast iron skillet and baked until the sides are tall and crisp and ridiculous and you think, there's no way this is normal. But it is! Today, I'm sharing this Dutch Baby Pancake with Bananas and Coconut Caramel. It's just as delicious as it sounds. Let's go make it!
The humble Dutch baby is a very simple, plain kind of breakfast pancake, so the fun comes in with all the toppings! I often see it served with whipped cream and berries, but I decided to go a different route and add a bananas foster-inspired filling. I did fresh sliced bananas and then whipped up a burnt sugar coconut caramel that is ta-die-for! So the burnt sugar is just because apparently I can't tell when my sugar is a bit of the crispy side, but the outcome was actually delicious! It has more depth of flavor and slightly bitter notes than traditional caramel, but it does NOT taste burnt. And then the coconut part comes in because I used coconut oil and canned coconut milk in lieu of the classic butter and cream. So yum!
This was my first time making a Dutch baby, but it definitely won't be my last! It's been on my blogging bucket list for quite awhile just because it's so pretty and photogenic, but the fact that it's also delicious doesn't hurt. The edges are light and crisp, and the center has a thick and chewy texture that's better than any pancake I've ever had. Also, can we just discuss that it's a pancake that requires NO flipping and NO babysitting?! Oh yes. So simple and so good! I am entertaining the idea of trying a vegan version, but I don't know how it would manage to get such high puffy sides without all the eggs! We shall see my friends.

Dutch baby pancake with bananas and coconut caramel
Ingredients
- *for the dutch baby*
- 3 eggs
- ⅔ cup milk
- ⅔ cup all-purpose flour
- ½ teaspoon pure vanilla extract
- pinch of salt
- 4 tablespoons unsalted butter
- *for the topping*
- 2 tablespoon corn syrup
- ¾ cup granulated sugar
- ¼ cup water
- ¼ cup coconut oil
- ¾ cup canned coconut milk
- ½ teaspoon sea salt
- 1 banana sliced
Instructions
- First, prepare the caramel. In a small nonstick pot, combine the sugar, corn syrup, and water. Place over medium heat, and stir occasionally until sugar melts.
- Increase heat to high, and allow sugar to cook and bubble until it turns caramel-colored {this will take 4-6 minutes}.
- Once the right color is reached, remove pot from heat and add in the coconut oil and coconut milk. BE CAREFUL as caramel will sputter and bubble! Once it's calmed down, whisk until smooth and add in the sea salt. Set caramel aside until needed.
- Now, prepare the Dutch baby. Turn your oven to 450F, and place a 10" cast iron skillet inside as it heats.
- Place the eggs, milk, flour, vanilla, and salt into a blender, and pulse until smooth.
- When oven is ready, cut your butter into small pieces, and add to the hot cast iron skillet. Swirl around until it's melted, then pour in the pancake batter.
- Cook for 18-20 minutes, until sides are golden brown and high and the center of the pancake is set.
- Serve immediately topped with the banana, caramel, and some powdered sugar if desired. Enjoy!
