Ooooh, you guys I am SO EXCITED to be sharing this recipe with y'all today! I have been meaning to share it for months, but I am a bad blogger and I kept forgetting {and kept losing the recipe} and alsooo lemon cookies are not in season in December. But alas, here we are! These Lemon Cake Mix Crinkle Cookies are incredibly delicious and SO easy to make. You'd never guess there was some sort of baking mix involved. Let's make them!
I can't share this recipe without giving credit where it's due! My sweet friend Carley goes to PA school with me, and she has become infamous in our class for these lemon cake mix cookies. I think she has to make at least a double, if not a triple batch, every time we have a birthday party. Everyone loves these, and it's almost impossible to eat just one! Carley loves baking almost as much as I do but, you know, she's a normal person and doesn't have a food blog to share her recipes on. So I decided to share it for her! I know it's a burden, but I suppose it's a cross I'm willing to bear. 😉
I have a recipe for Brownie Crackle Cookies on the blog already, which are pretty similar, but while those are pretty chewy and fudgy {like a brownie of course}, these are more fluffy and airy! They're a bit like little lemony clouds. SO good! I'm sure you could do this with really any flavor of cake mix, but I have to say these lemon cake mix crinkle cookies are kind of perfect on their own. Though really, it makes you think of all the possibilities! Red velvet, vanilla, confetti... how fun do those sound!

lemon cake mix crinkle cookies
Ingredients
- 1 box lemon cake mix {I like Duncan Hines Lemon Supreme for this!}
- 2 eggs
- ⅓ cup vegetable oil
- 1 teaspoon lemon extract {optional}
- ½ cup powdered sugar for rolling
Instructions
- Preheat oven to 375F, and line two cookie sheets with parchment or silicone liners.
- In a medium bowl, stir together the cake mix, 2 eggs, vegetable oil, and lemon extract until a soft dough forms.
- Place the powdered sugar in a small bowl. Using a spoon or cookie scoop, make balls of dough about 2 tablespoon big, and roll into the powdered sugar. Shake off the excess, and place on prepared pan, about 2 inches apart from each other.
- Bake for 9-11 minutes, until puffy, dry, and the powdered sugar has cracked.
- Serve immediately or store at room temperature.

The ingredient list I provide are the only things you need! Do not make the cake mix according to directions, just use the ingredients and instructions in my recipe.

Hi, I looove this recipe. I added lemon zest instead of lemon extract and boy did that punch up the wows. Lol I’ve used this Lemon Supreme Cake mix as a pound cake too with the added lemon zest and I got the same reactions. Please tell Carly thank you for the recipe and thank you for sharing it. I just finished baking these lemon cookies and they are great! I used unsalted butter insted of oil and lemon juice in place of the extract. They are a little sticky to work with but worth it.
