Christmas is getting close, and the best part of the season is spending time with friends and family! I've paired up with Minute Maid Orange Juice today to bring you these adorable Personal Brunch Pizzas. These are sure to become your new party favorites! I grabbed some store-bought pizza dough and topped it with all of the breakfast mainstays: sausage, bacon, eggs, potatoes, and cheese. This is such a fun take on the usual morning staples, and of course they go perfectly with a tall, fresh glass of OJ!
Initially, I was planning on these being mini pizzas but as you can see, they came out just a little bigger than I had anticipated 😉 But worry not, these are so yummy that having extra is only a good thing! To make these, I headed to my local Tom Thumb and stocked up on all the breakfast necessities {and Minute Maid Orange Juice}! Tom Thumb even has some fabulous ready-made pizza dough in their deli section, so that's what I used today. One 1-lb ball of dough made 4 of these brunch pizzas. If you want to make them a little more mini, you can split the dough into 6 pieces instead.
The best thing about these personal brunch pizzas is that they are so easy to make and customize, and you can make most of the elements ahead of time! I think it helps take a lot of pressure off when you're able to prep ahead, especially when you're hosting holiday parties at home. These are also hands-on, so it's easy to involve the kids and get them to help! Let them pick their own toppings, and they're sure to create a brunch meal they will love.

Ingredients
- 1 1- lb ball of pizza dough
- 6 strips bacon
- 8 oz breakfast sausage {about half of a standard roll}
- 1 cup frozen potatoes o'brien
- 1 tablespoon oil
- 2 cups shredded mild cheddar cheese
- ½ cup tomato sauce
- 4 eggs
- 1 tablespoon Italian herb seasoning
- salt & pepper to taste
- 2-3 green onions diced
- Minute Maid Orange Juice to serve
Instructions
- First, cook the sausage. In a large skillet, crumble sausage and cook on medium-high heat until lightly crisp and browned, with no pink remaining. Transfer to a small bowl.
- In the same skillet, cook bacon slightly less than your preferred crispiness. Remember it will cook a little more in the oven! Once ready, crumble and set aside in another small bowl.
- Finally, make the potatoes. Add the tablespoon of oil (if needed), and pour in the potatoes in one single layer. Sprinkle the Italian herb seasoning on top, as well as the salt and pepper.
- Cook for 5-6 minutes undisturbed, then flip and cook for 4-5 minutes more. Keep cooking until potatoes are crispy on the outside and cooked through.
- Next, preheat the oven to 550F. Use a pizza stone if you have one, but if not, line a baking sheet with parchment paper.
- Prepare your clean work surface and lightly dust with flour. Divide your ball of pizza dough into 4 equal pieces, and roll each out into a small circle.
- Transfer the pizzas to the baking sheet. Top each pizza with some tomato sauce, followed by the bacon, sausage, potatoes, and cheese. Make a small well in the middle of the toppings, and crack an egg on each. Sprinkle the egg with more salt and pepper.
- Bake pizzas for 12-15 minutes, until crust is golden brown and the egg white is set.
- Sprinkle the green onions on top, and serve immediately with Minute Maid Orange Juice!
- *NOTE: If you want to prep ahead, cook the bacon, sausage, and potatoes ahead of time, and just assemble the pizzas when needed!*

Hi Cathy! Yes, that is what I cooked the pizzas on with my pizza stone. You can try a lower temperature for a longer time if you prefer! Basically I just cooked them until the egg on top was set!
