Marbled Cheesecake Brownies combine a fudgy, made-from-scratch brownie with a rich cheesecake swirl and dark chocolate chips for a decadent dessert!
You guys, you guys, YOU GUYS. I survived my first semester of PA school!!!! I don't know who I need to thank, but I am so glad it's over. Time for a very well-deserved {albeit painfully short} break! I decided the best way to start off my break was with my favorite food group: brownies. This recipe for Marbled Cheesecake Brownies is actually a bit of a revamp from an old but very delicious recipe of mine. I decided to double the cheesecake topping, make the brownie from scratch, and of course take better pictures. And here they are!
While these cheesecake brownies may appear similar to my Oreo Cheesecake Brownie Bars, the difference with this recipe is that the cheesecake is actually swirled into the brownie. Ohhh, yes. In the other recipe, the brownie really just serves as a crust for the super thick cheesecake layer. In this case, the brownie is definitely the star! Start with your favorite brownie recipe {I'm not-so-secretly partial to my One-Bowl Truffle Brownies}, top them with a super easy 2-minute cheesecake topping, and pop them in the oven. They look totally fancy and impressive, but I promise they are ridiculously simple!
So, what did I learn this semester?! Aside from the obvious school things, I've learned that the only way I can blog is by making as many recipes as possible in one sitting, and then slowly posting them as I have little pockets of time. {brownie recipe from my One-Bowl Truffle Brownies}

Ingredients
- *for the topping*
- 8 oz cream cheese softened
- 2 tablespoon plain greek yogurt or sour cream
- 2 eggs
- ½ cup white sugar
- 2 tablespoon white all-purpose flour
- 2 teaspoon vanilla extract
- pinch of salt
- *for the brownies*
- ½ cup sugar
- 2 tablespoon milk
- 2 eggs
- ⅔ cup all-purpose flour
- ¼ teaspoon salt
- ¼ teaspoon baking powder
- ¼ teaspoon baking soda
- 3 tablespoon unsalted butter
- 1 ½ cups semisweet chocolate chips
- 1 teaspoon vanilla extract
- additional chocolate chips for topping
Instructions
- Preheat the oven to 350F, and line a 9x9 pan with parchment paper.
- In a medium bowl, whisk together the cream cheese, greek yogurt, and sugar until smooth and creamy.
- Beat in the flour, followed by the eggs, vanilla, and salt. Stir until smooth, then set aside.
- Now, make the brownie. In a medium, microwave-safe bowl, combine the chocolate chips, butter, milk, and sugar. Microwave for 30-45 seconds, until everything is smooth and melted.
- Let cool slightly, then whisk in the eggs, one at a time, and the vanilla extract.
- Stir in the flour, salt, baking powder, and baking soda.
- Pour the brownie batter into the prepared pan, and pour the cheesecake topping on top.
- Using a butter knife, gently swirl the brownie and cheesecake together to create a marbled effect.
- Top brownie with more chocolate chips if desired.
- Bake for 30-35 minutes, until the brownie does not jiggle and a toothpick inserted in the center comes out with just a few moist crumbs. Let cool to room temperature before removing from pan.

These brownies look amazing! I have only 8 × 8 pans. Should I adjust the cook time? I'd like to make them for my brother's birthday in 2 days.

I think you may need just a couple of extra minutes of cooking time, but it should be the same for the most part! 🙂
