This Triple Chocolate Poke Cake is the perfect dessert for chocolate lovers! It combines moist cake with chocolate pudding for a simple but delicious treat.
Oh, y'all. It has definitely been one of those weeks. Ya know, when it's only Wednesday, but it feels like it's been the longest week ever already?! Sigh. On a brighter {but perhaps scarier} note, I am over ⅔ of the way done with my first semester of PA school already!!!! As the semester progresses, things keep getting crazier, so that's why I haven't been able to post as much 😉 But anyways. Back to food! To try to get us through this god-awful long, sad week, I whipped up this incredible Triple Chocolate Poke Cake! Homemade chocolate-chocolate chip cake, slathered in chocolate pudding, and with chocolate shavings on top for good measure.
I remember back in my earlier days of blogging, I made a fab Oreo Poke Cake and people had absolutely no idea what it was! Now that we have Pinterest and Instagram and those ubiquitous Facebook mini recipe videos however, I feel like poke cakes are alllll over the place. I personally think they're just about the best thing ever. I decided to make the cake from scratch this time and use store-bought pudding mix as a shortcut, but it's just as simple to make everything using box mix! Or you can even get really fancy and make everything yourself. Either way, I think it's such a fun idea! The pudding makes the cake super moist and melt-in-your-mouth, and this way you don't even have to bother with frosting. It's the perfect entertaining dessert!
While I decided to make a chocolate poke cake today {because we all know the world revolves around chocolate in my household}, another reason I love poke cakes is that the combination possibilities are endless. I have been meaning to re-make the aforementioned Oreo Poke Cake for ages just because it's so good! You can't go wrong with chocolate poke cake slathered in Oreo pudding with chunks of cookie on top, can ya? I think not. I like to think of this particular recipe as a gateway drug... you can't get any more basic than chocolate on chocolate, but once you try it, I bet poke cakes will become your new favorite thing, too! triple chocolate poke cake
Ingredients
- 1½ cups all-purpose flour
- ⅔ cups dark cocoa powder
- 1½ teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ¾ cups whole milk
- 1 teaspoon vanilla extract
- ¾ cup unsalted butter softened
- 1½ cups sugar
- 3 eggs
- 1 cup chocolate chips
- 1 large package chocolate pudding mix 3.4 oz + milk called for on package
Instructions
- Preheat the oven to 350F. Grease and flour a 9x13 baking pan, and set aside.
- In medium bowl, whisk together flour, cocoa, baking powder, baking soda, and salt. In a measuring cup, mix together milk and vanilla.
- Using your stand mixer, beat butter and sugar till blended. Increase speed to high and beat for 2 minutes. Reduce speed to medium-low and add eggs one at a time, beating well after each addition.
- With mixer at low speed, alternatively add the flour mixture and the milk mixture, starting and finishing with the flour. Beat until batter is smooth, occasionally scraping bowl with a spatula.
- Mix in the chocolate chips then pour batter into prepared pan; spread evenly. Bake until toothpick inserted in center comes out clean, 25-30 minutes.
- Let cake cool slightly, then using the handle of a wooden spoon, poke holes evenly over the surface of the cake.
- Prepare pudding according to package directions, and pour over the cake before it sets.
- Place cake in fridge for 2-3 hours, until pudding has set and solidified.
- Enjoy with whipped cream!
