Hello, dearest readers! Thank you so much for hanging around my little blog even though school has been completely crazy and taking up ALL my time lately! I just finished my first complete round of exams (so 4 total) so I have approximately 5 minutes to breathe before the next round starts. But it's okay! This is just what my life is now. 😉 I am sharing these phenomenal Coconut Lime Shrimp Packets with y'all today, which are from my friend Jesseca's brand new cookbook Foiled!
If you've been hanging around here for any limited amount of time, you've probably noticed I am an absolute shrimp fiend! Give me all of the shrimp, all of the time. I honestly haven't found a cooking method I haven't liked featuring these little shellfish, so as I was flipping through Jesseca's book, this recipe totally stood out to me. It starts with a delicious marinade made with coconut milk, shredded coconut, lime juice, jalapeño, garlic, and cilantro, which is then tossed with the shrimp. You then wrap everything up in a foil packet, and either throw it on the grill, over a campfire, or in the oven. So simple, but these coconut lime shrimp packets pack SO much flavor!
I am seriously all sorts of in-love with this coconut lime marinade though, and I can't wait to try it on chicken and other protein! The possibilities are endless. While this is my favorite recipe from Foiled (well, as of right now that is 😉 ) Jesseca's book has tons of tasty, simple recipes, perfect for camping or just for something fun and mess-free. All of the recipes in this cookbook are made in tin foil packets and are made to be cooked over a campfire... but they work out just as well over the grill or in the oven. I made these coconut lime shrimp packets in my gas grill and they turned out perfectly! Juicy, tender, and super flavorful.

coconut lime shrimp packets
Ingredients
- 2 cloves of garlic
- 3 tablespoon coconut milk
- ¼ cup shredded coconut
- juice and zest of 1 lime
- 2 teaspoon soy sauce
- 2-3 tablespoon fresh cilantro leaves
- 3 tablespoon olive oil
- ½ jalapeno seeded
- ½ teaspoon salt
- 1 ½ lbs shrimp peeled and deveined
Instructions
- Combine all ingredients, except the shrimp, in a food processor, and blend until smooth and creamy.
- Toss the shrimp with the sauce, and allow them to marinade for at least 30 minutes.
- When ready to cook, heat up your gas grill to medium heat.
- Get a large piece of foil, and spray generously with nonstick spray. Pour the shrimp and marinade mixture in the middle in a single layer, and fold and secure the tin foil package so nothing leaks.
- Cook for about 10-12 minutes, until shrimp are pink and cooked through. Serve immediately over rice or with your favorite side dish!
