So... I have a confession. A really, very embarrassing confession. I haven't posted any sort of cookie recipe in two months, but I haven't posted proper cookies since literally Christmastime. CHRISTMAS! Who does that??? Me, that's who. I knew that cookies had to make a comeback on the blog, and they had to be something special. In slightly related news, I grossly overestimated how much cream cheese I would need for this wedding cake the other weekend, and as a result, I have like...2 and a half pounds of spare cream cheese hanging out in my fridge. Oops. Once I discovered that cream cheese in cookies was a thing, I knew exactly what I had to do. Two birds, one stone, ya know? These Cream Cheese Chocolate Chip Cookies will change your life!
Now, I know these cream cheese cookies are old news to some, but they're definitely new to me! The original recipe comes from the fabulous Averie Cooks, and I have honestly loved every recipe I've made from her site. These were no exception! I am personally an absolute chewy, gooey cookie fanatic. I understand that crisp, crunchy cookies have their time and place... I just haven't quite figured out when and where that would be 😉
These cream cheese chocolate chip cookies promised not only to be ridiculously soft and chewy, but to stay that way thanks to the cream cheese and a bit of cornstarch, and they absolutely delivered. I don't know how it all works but it just does! These babies will be perfectly chewy and delicious even days after you've baked them. Well... if they even last that long, that is. I will go ahead and say that these cookies don't taste at all like cream cheese, surprisingly enough! There are definitely cheesecake-inspired cookies out there that do but this recipe is not one of those; in this case, the cheese works to replace some of the butter and keep the cookies extra moist!

cream cheese chocolate chip cookies
Ingredients
- ½ cup {1 stick} unsalted butter at room temp
- 2 oz full-fat cream cheese
- ¾ cup brown sugar packed
- ¼ cup granulated white sugar
- 1 egg
- 1 teaspoon vanilla extract
- 2 ¼ cups all-purpose flour
- 2 teaspoon cornstarch
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 1 cup dark chocolate chips
Instructions
- Preheat the oven to 350F, and line two baking sheets with silicone liners or parchment paper.
- In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and cream cheese together until smooth and creamy.
- Add in the brown and white sugars, followed by the vanilla and egg. Beat the mixture on medium-high for 4-5 minutes until very light and fluffy.
- Add in the flour, baking soda, cornstarch, and salt, and mix until the dough comes together. Finally, stir in the chocolate chips.
- Using a cookie scoop or spoon, make walnut-sized scoops of dough, space them evenly on the prepared baking sheets {I like to do 12 per pan}, and lightly flatten with your hand.
- Bake for 8-10 minutes, until cookies have slightly spread and the tops appear dry. Do not overbake as they will firm up as they cool. Enjoy!

Poor cookies! They've definitely fallen by the wayside on my blog as well in favor of some of my other favorites like cupcakes and doughnuts. But these look delicious and you're definitely inspiring me to whip up some cookies!
