Hello, lovely readers! I am so excited to have paired up with Blue Bunny® ice cream today to bring you this delicious recipe perfect for spring! I decided to pair the scrumptious Blue Bunny® Butter Pecan ice cream with homemade chocolate-chocolate chip cookies and an indulgent salted caramel sauce to create the ultimate turtle-inspired ice cream sandwiches. These are so simple and so incredibly yummy! Let's get to work.
I'm absolutely loving the new Blue Bunny® clear ice cream packaging! It allows you to see all the flavors and the decadent little bits and swirls hiding within the frozen treat right before your eyes. I chose to create my ice cream sandwiches with the Butter Pecan flavor, and made some with the Blue Bunny® Homemade Vanilla for those who don't like nuts. However, there are tons of new flavors out that you can use to create your own homemade treats! How fun does Vanilla Cupcake or Peanut Butter Party sound?! I'm definitely gonna be stocking up before the warm weather shows up.
You can shop at your local Walmart and find all these fabulous Blue Bunny® ice cream varieties! The newest additions are Homemade Vanilla, Mint Chocolate Chip, Cherrific Cheesecake, and of course Butter Pecan. I decided to try out the Sweet Freedom® version of the Butter Pecan, which has no sugar added and is made with skim milk, so it has just half the fat and ⅓ fewer calories than traditional ice cream. Y'all, it was so rich and creamy, and you'd never guess it's a healthier option! While you're shopping, don't forget to pick up some cookie basics: flour, sugar, cocoa, butter, eggs, and of course chocolate chips. You also need some heavy cream to make the salted caramel! I know that making caramel at home may sound a little daunting, but I promise it's so easy and seriously delicious. Honestly, you could even forgo the cookies in a pinch and just pour the caramel on top of your favorite ice cream, sundae style. I promise I won't tell. 🙂
These ice cream sandwiches are the perfect spring dessert, and you can even let people personalize them by laying out all the components and allowing everyone to construct their own. Wanting lots of ice cream and no caramel? You can do that! Wanting to drench the inside and outside of your sandwich with caramel? Well, you can do that too. Imagine the possibilities with multiple Blue Bunny® ice cream varieties! The only downside to making ice cream sandwiches, I will admit, is that they can get a liiiitttle bit messy. Ha. turtle ice cream sandwiches with homemade salted caramel
Ingredients
- 1 container Blue Bunny® Butter Pecan ice cream
- *for the cookies*
- 1 cup {2 sticks} unsalted butter at room temperature
- 1 ¼ cup granulated sugar
- 2 eggs
- ¼ cup dutch-processed cocoa powder
- ¼ cup dark cocoa powder
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 cup mini chocolate chips
- *for the salted caramel*
- 2 tablespoon corn syrup
- ¾ cup granulated sugar
- ¼ cup water
- ¼ cup unsalted butter at room temperature
- ¾ cup heavy cream
- ½ teaspoon sea salt
Instructions
- First, make the cookies. Preheat the oven to 350F.
- In the bowl of a stand mixer fitted with a paddle attachment, beat the butter and sugar until light and fluffy.
- Add in the eggs, one at a time, beating well after each addition. Stir in the vanilla.
- Beat in the cocoa powders, then add the flour, salt, and baking powder {dough will be firm}. Finally, stir in the chocolate chips.
- Scoop cookie dough out into walnut-sized portions, and place on baking sheet lined with parchment. Flatten each slightly, and bake for 12-15 minutes. Let cool completely.
- Next, make the caramel sauce.
- In a medium pot, combine the sugar, corn syrup, and water.
- Place over medium-high heat, stirring occasionally, until sugar dissolves.
- Increase heat to high, stop stirring, and allow the caramel to cook and bubble until it turns to a caramel color {this will take a good 5-7 minutes}.
- Once color is reached, remove pot from heat, and stir in the butter and heavy cream, and finally the salt. Allow caramel to cool completely before using. It will solidify as it cools off, too.
- When ready to assemble ice cream sandwiches, grab two of the cookies, spread caramel on one, and place a scoop of Blue Bunny® Butter Pecan ice cream on the other. Sandwich cookies together and enjoy!
