Okay, this is such a blogger thing, but... do you ever make something just because you know it's gonna come out really pretty? That's like literally the story of my life. My entire blog is a collection of pretty food, and here's another pretty thing to add to the archives. Heirloom tomato and burrata pizza! Oh man, you guys. This is like margherita pizza on the next level. Yes, you have your crust and your tomato sauce... but then you add some ridiculously creamy burrata cheese, and some colorful sliced heirloom tomatoes, and you have a total showstopper. This is the perfect summery pizza!
Alright, yeah, I know school's started so it's technically not summer anymore... but hell, it's still August so let me enjoy my fancy summer tomatoes while I still can 😉 This is incredibly easy but with huge flavor payoff! If you're not one for crazy pizzas with a million toppings, you'll definitely appreciate the simplicity of the flavors paired with the gorgeousness of the presentation. Oh yes. Pretty food is most definitely the best food.
And now, time for a brief lesson in Italian food! Burrata is the super rich, decadent cousin of the beloved mozzarella. Imagine traditional fresh mozzarella consistency on the outside, but a soft, creamy texture on the inside. This is the perfect thing to try if you love the cheesy goodness of mozzarella but want... more. More cheesy, melty, indulgent goodness on your pizza {or in your caprese salad. or sandwich. whatever. burrata goes with everything}.
Can you make this pizza with normal tomatoes and normal mozzarella? Well, most certainly, but I had been hunting for heirloom tomatoes for ages and I knew this was the perfect way to use them. Excuse me for being a basic white girl blogger, but I just knew I wanted to make a tomato rainbow on, well, something. That something ended up being pizza because we're pizza fiends in my household, but it could have just as easily been a savory tart. Or a fancy salad. But again, we love pizza so I decided to make fancy tomato and fancy cheese pizza and take fancy pictures of it for ya. 🙂
Also, side note... but do "normal" people have any use for heirloom tomatoes? I mean us food bloggers, we take pictures so we want rainbow tomatoes for our food and whatnot. But do normal people buy heirlooms just to feel fancy? Do they post them on their insta? Who knows. I mean, I'll definitely admit that these were tasty but maybe not $4 a pound tasty, ya feel me? But really, this is a legit question. Normal people, please answer my inquiry. In the meanwhile, make this beautiful pizza and savor the last moments of summer while you still can! Us in Texas, well, we'll be wearing shorts until November.

heirloom tomato and burrata pizza
Ingredients
- 1 ball storebought pizza dough
- 6-8 oz fresh burrata cheese {more or less to taste} diced
- 2-3 heirloom tomatoes sliced
- ¼ cup tomato sauce
- salt and fresh basil for seasoning
Instructions
- Preheat the oven to 550F {if you have a convection option, definitely use it!}.
- Lightly oil a round pizza pan, and place your pizza dough inside, lightly pressing the pizza dough towards the edges to cover the whole surface.
- Spread the tomato sauce on the crust, then cook for about 10 minutes in the preheated oven.
- Remove crust from the oven, top with the cheese, sliced tomatoes, basil leaves, and a generous sprinkling of salt. Return to oven for 15-20 minutes, until the bottom of the crust is solid and not soggy, and the top is lightly golden brown.
- Let cool slightly, then cut and enjoy!
