Sooo... if you follow me on Instagram {which you really should, I'm an aggressive food over-sharer and it's a lot of fun}, you might remember my peach picture from last week. I bought a whole bunch of adorably tiny Georgia peaches at the store for something like a dollar a pound, and then I couldn't figure out what to do with them! I ate some, of course, but as a food blogger I just knew there had to be some recipe I could make with them. Enter... cobbler! Can you believe I've never made proper cobbler? I made this pumpkin cobbler-pie hybrid last fall, which was amazing, but not quite the traditional southern cobbler, ya know? Today's deliciousness includes strawberries and peaches, and it's amaaazing. Let's get to work!
This recipe is so simple and so delicious! I'm sorry, I feel like I say a recipe is easy on pretty much every single recipe I post EVER, but it's true! I might be a food blogger, but honestly I'm pretty lazy when it comes to cooking. That's why, although I love decorating cakes for events, I don't think I could do that for a living. Like. Ugh. So much work! Don't get me wrong, I absolutely adore cake decorating, but I think it's because it's a special-occasion kinda thing. If it was a daily thing, I don't think I'd love it as much as I do. 🙂 But I digress. Back to cobbler! This scrumptious treat is vegan {because I have a certain infamous vegan best friend whose feelings get hurt when she can't eat dessert with me}, but if you don't have vegan ingredients in your house, you can oh-so-easily just use regular dairy butter {or coconut oil} and dairy milk. No biggie!
You start off by making a simple biscuit-like dough using flour, sugar, baking powder, {vegan} butter, and {vegan} milk, and let it hang out in the fridge for a lil bit. Then you toss sliced strawberries, sliced peaches, a little more sugar, and orange juice in your trusty cast iron skillet, and you cook that until the fruit gets soft, sugary, and sticky. Yum! Then you heat up your oven, drop spoonfuls of your dough on top of your jammy fruit mixture, and you bake the whole thing for about 20 minutes. Top with some ice cream, and you are good to go. So easy, so fast, so good! Who ever said homemade dessert has to be difficult?

{vegan} strawberry peach cobbler
Ingredients
- *for the crust*
- 2 cups all-purpose flour
- ¼ cup sugar
- 2 tablespoon baking powder
- 4 tablespoon EarthBalance {or dairy butter or coconut oil}, cold
- 1 ¼ cup milk
- 1 teaspoon vanilla extract
- salt
- *for the filling*
- 1 lb fresh strawberries hulled and quartered
- 4-5 peaches sliced
- ¼ cup sugar
- 1 cup orange juice
Instructions
- In a medium bowl, whisk together the flour, salt, and baking powder.
- Add in the butter, and mix it in using your fingertips or a pastry cutter until the texture resembles coarse crumbs.
- Add in the milk and vanilla extract, and mix until a dough forms. Place the dough in the fridge while you prepare the fruit.
- Preheat the oven to 400F.
- In a cast iron skillet, combine the strawberries, peaches, sugar, and orange juice. Turn heat on medium, and cook the fruit mixture, stirring occasionally, until it cooks down to a runny jam consistency.
- Drop the dough on top of the fruit mixture in spoonfuls, then place in preheated oven and bake for about 20 minutes, until the dough is cooked through.
- If your crust looks a little white, you can broil the pan for a few minutes to help it become golden brown and delicious!
- Serve with ice cream!

I am pretty much making this recipe tomorrowish<-- can I be any more vague? What I mean, is I am traveling out of town and want to make a cobbler of sorts. I love the simple ingredients in this and the "throw it together and let it bake" instructions. I also will more than likely make it tomorrow...but there's always the chance it could be the day after... In case you wanted to know all that. Anyways, this look amazing.
