Hello, my darlings! Today, I'm partnering up with Lavazza Coffee again to bring you a delicious sweet brunch option. Chocolate-Glazed Cappuccino Donuts! Because why limit yourself to drinking coffee when you can also eat it? In donut form? That's what I thought. These babies are easy-peasy, and since they're baked in a donut mold, you don't even have to mess with yeast and rising times. All you need is 30 minutes time, and you too can have a plateful of delicious, chocolatey donuts at your fingertips. So what are you waiting for? Let's get to work.
The last Lavazza recipe I shared with y'all was this chocolatey take on my mom's famous tiramisu, and now here I am, pairing chocolate and coffee once again. I really can't help myself, these two are a match made in heaven! Though, chocolate is basically divine paired with most things: peanut butter, berries, bananas, marshmallows... the list is pretty much endless. For these donuts, I took some inspiration from a wedding cake I did back in October. One of the tiers was coffee cake with a coffee cream buttercream, and people went CRAZY for it! Like, people I hadn't talked to since high school personally messaged me and told me how good the cake was. I've been meaning to recreate it since, and this was the perfect occasion!
These donuts are super simple to make, and if you don't have a donut pan, don't worry! They will bake up just fine as cupcakes. They might not be as cute, but the flavor will still be the same 🙂 All I did was whip up this cakey batter, bake them up, and then dip the tops in a simple dark chocolate ganache. If it wasn't for the fact that I'm a food blogger and I have to take hundreds of pictures of my food, these would have only taken about 30 minutes start to finish. Because the glaze is a melted chocolate ganache, you honestly don't even have to wait for the donuts to cool all the way before frosting them, which is a huge time saver! These treats are simple, delicious, and the perfect sweet addition to your weekend brunch. Happy baking!
chocolate glazed cappuccino donuts
Ingredients
- *for the donuts*
- 1 cup brown sugar
- ½ cup {1 stick} unsalted butter softened
- 1 egg
- 1 teaspoon vanilla extract
- ½ cup greek yogurt
- ½ cup strongLavazza coffee cold
- 1 ⅓ cup all-purpose flour
- 1 teaspoon baking soda
- ⅛ teaspoon salt
- *for the chocolate glaze*
- ½ cup dark chocolate chips
- ¼ cup heavy cream
Instructions
- Preheat the oven to 350F, butter your donut pan and sprinkle with cocoa powder, tapping out the excess. Set aside.
- In the bowl of a stand mixer, beat together the butter and sugar until light and fluffy.
- Add in the egg and vanilla, and beat well.
- Mix in the greek yogurt and baking soda.
- Mix in the flour and salt until incorporated, then slowly pour in the coffee. Make sure it's room temperature or colder!
- Fill your donut molds about ⅔ full {I found the best way to fill them is to pour the batter in a large ziploc bag, snip the corner, and pipe it in. Fast and mess-free!}.
- Bake for about 15 minutes, until a toothpick inserted in the thickest part of the donut comes out clean.
- Allow to cool for a few minutes in the pan, then turn donuts onto a cooling rack and allow to cool completely.
- When ready to glaze, heat the chocolate chips in a microwave-safe bowl in 20 second intervals until completely smooth. Slowly whisk in the heavy cream until a smooth, creamy glaze forms.
- Dip the tops of the donuts in the glaze, using a spoon to help smooth it out if desired. The glaze will not harden all the way, but you can refrigerate them if you want it to harden a bit more!
