I don't know about you guys, but I am not ever one to turn down a good grilled cheese sandwich! On one single condition... and I do realize it's kind of a weird condition. But my grilled cheese absolutely, positively cannot contain meat... no ham or turkey or anything! Otherwise, in my head, it becomes a toasted sandwich, and not a grilled cheese sandwich. Tooootaallly not the same thing. See what I'm saying? The cheese has to be the star! So, when MELT Buttery Spread approached me and asked if I wanted to review their product and cook a thing or two, the first thing that came to mind was the perfect, ultimate grilled cheese sandwich. Two toasty pieces of bread, two melty slices of cheese, and as many veggies as you can possibly fit in between! I stuffed my sandwich with tomatoes, avocado, mushrooms, alfalfa sprouts, spinach leaves, and jalapeno slices {though you can leave those out if you can't handle the heat!}. It came out beyond delicious!
A big thank you to MELT for sending me such a fantastic and easy to use product. MELT buttery spread tastes like butter, except it's fluffy and easy to spread, and free of lactose, casein, soy, gluten, trans fats, and artificial colors and flavors! It does contain clarified butter, so it's unfortunately not vegan. It has fewer calories and half the saturated fat of regular butter, yet cooks and bakes up just the same! So basically, it's like the healthiest butter ever. Since this grilled cheese, I've used it to make macaroni and cheese, spread it on toast with jam, and baked it up in a batch of brownies. I seriously love it! My favorite thing about it is that it contains coconut oil, which is amazing all by itself... but mixed with butter to make a spread? It's basically the best thing ever! Ultimate Veggie Grilled Cheese
Ingredients
- 2 slices whole wheat bread
- 2 slices cheese of choice {I find that American melts the best!}
- 1 mushroom sliced thickly½ cup fresh baby spinach leaves
- ½ tomato sliced {3-4 slices}
- small handful of alfalfa sprouts
- ½ avocado sliced
- 3-4 slices jalapeno
- 2 tablespoon MELT buttery spread
Instructions
- Preheat a small nonstick pan over medium heat.
- Meanwhile, assemble the sandwich!
- Top one slice of bread with one slice of cheese, followed by the tomato slices, baby spinach leaves, avocado slices {mash slightly to keep from slipping out of the sandwich}, jalapeno slices, alfalfa sprouts, and mushroom slices. I find that putting the bulkier sliced ingredients right next to the cheese works best!
- Top with the other slice of cheese and slice of bread.
- Spread 1 tablespoon of MELT buttery spread on the top slice of bread, then place the sandwich, butter-side down, in the hot pan.
- While one side cooks, spread the other slice of bread with the remaining 1 tablespoon of MELT spread.
- Once the cheese starts to melt and the bread is toasted, carefully flip the sandwich and finish cooking. Serve immediately!
