It's almost Thanksgiving! Ahhhh! Do you know what you're cooking yet? Are you hosting your family at your house, or are you bringing goodies to someone else's? In either case, you should totally make these Green Salsa Stuffed Jalapenos. They might sound like standard jalapeno poppers, but they are actually so much better... and ridiculously easy! You are 5 ingredients away from the best appetizer ever.
As you may have guessed, this is one of my H-E-B sponsored posts. My November Primo Picks package contained a jar of these awesome Stuff'Em Jalapenos, and I knew for sure I wanted to experiment! What these babies are, basically, is jalapeno peppers that are already washed, cut, and cleaned of ribs and seeds, and ready for you to stuff as you please! Seeing as I had never had jalapeno poppers before {I know, I KNOW}, I decided to go the semi-traditional route and use cream cheese and bacon.
Taking inspiration from the fast and easy jarred jalapenos, I decided to chop the bacon into small bits, fry it up in a single batch, and mix it into the cream cheese... as opposed to wrapping every single pepper with a strip of bacon. Who has time for that anyway? For an extra kick, I mixed the cream cheese with H-E-B's delicious That Green Sauce. Super simple! After stuffing the jalapenos, I sprinkled them with some breadcrumbs, and baked for about 12 minutes. And... done. Who's hungry?

Green Salsa Stuffed Jalapenos
Yields: 18-20 peppers
2 jars H-E-B Stuff'Em jarred jalapenos
1 block {8 oz} Neufatchel cream cheese, softened
½ jar H-E-B That Green Sauce
5-6 strips of bacon
2-3 tablespoon whole wheat breadcrumbs
Preheat the oven to 400F, line a baking sheet with foil, and spray with nonstick spray; set aside. Cut the bacon into small strips, and cook to desired doneness in a small frying pan. I prefer chewy bacon, but you can make it as crispy as you would like! When ready, pat bacon down with a paper towel to remove excess grease, and set aside. In a small bowl, combine the cream cheese, That Green Sauce, and bacon bits. Drain the jalapenos and rinse quickly under running water to remove any brine and seeds. Shake out the water, and stuff them with the prepared cream cheese mixture. Place the stuffed peppers on the sprayed pan, sprinkle with breadcrumbs, and bake in the preheated oven for 12-14 minutes, until cheese is melted and breadcrumbs are toasted. Let cool slightly and serve immediately!
