If you know me, you know I kinda sorta have a greek yogurt addiction. Like... it's a problem. My fridge has a half-shelf totally dedicated to this addiction, and I have to eat one every single day. My name is Valentina, and I am addicted to greek yogurt. So, I'm sure you can imagine that when Chobani approached me and asked if I wanted some greek yogurt for experimenting in the kitchen, I could hardly contain my excitement. Let the fun begin!
This delicious Key Lime Bundt Cake is my first creation, and can I just tell you, it's SO good. Super moist and rich and refreshingly lime-y. This is a perfect summer cake! To get just the right amount of fresh lime flavor, I used some lime zest, along with Chobani's new Key Lime 2% Greek Yogurt. I loved that it wasn't completely fat free because it gave the cake some lusciousness without being heavy. Yum, yum, yum! The cake has Chobani mixed into the batter, and it's topped with an easy peasy Greek Yogurt glaze. Chobani sent me two cups of the key lime flavor, and while one went in the cake, I think the second will just be shoveled straight into my mouth! I have some other fun new flavors hanging out in my fridge just waiting to be experimented with, and I can't wait to report back on the results. In the meanwhile, happy eating!
Key Lime Chobani Bundt Cake
Recipe adapted from my mom's recipe collection
Yields: 1 bundt cake
for the cake
1 ¼ cups all-purpose flour
7 tablespoon potato starch
1 tablespoon baking powder
pinch of salt
4 eggs
1 heaping cup powdered sugar
⅔ cups vegetable oil
1 container key lime Chobani + ⅓ cup plain Chobani
zest of 2 limes
for the glaze
1 cup plain 2% Chobani yogurt
about 1 cup powdered sugar {more or less as needed}
juice of 1 lime
Preheat the oven to 375F, and butter and flour your Bundt pan. Set aside for now.
In the bowl of a stand mixer fitted with the whisk attachment, beat the eggs until frothy. Add in the powdered sugar and salt, and beat on high until the mixture becomes very light, fluffy, and voluminous. Add in the flour, potato starch, baking powder, lime zest, and oil, and mix until incorporated. Finally, stir in the key lime and plain Chobani. Pour the batter into your prepared pan, and bake for 35-40 minutes, until a toothpick inserted in the center comes out with just a few moist crumbs. While the cake cools, prepare the glaze. In a small bowl, whisk together the plain Chobani, lime zest, and powdered sugar until smooth. If you want a thicker glaze, add more sugar! Pour glaze on top of your cake, and top with more lime zest. Enjoy!
