I am so excited to share this recipe with y'all today! I have been dying to make clafoutis, which is a traditional French cake made with fruit { usually cherries } and a light, pancakey batter, and then baked in the oven. I finally got around to it today, and couldn't have been more pleased! This sweet treat is super simple and fast to make, and is the perfect blank canvas for enjoying any of the fabulous seasonal fruit we have at the moment. I picked cherries, apricots, and peaches, but the options are endless! When fall and winter roll around, I will definitely make one of these with apples or pears. The batter tastes quite plain, so it can work with basically any fruit you could think of! While searching for clafoutis recipes, I even stumbled upon a few chocolate ones. Hmm... that will have to go in my "to-bake" list. 🙂
I found this recipe on a French blog, so if the measurements are a little weird, it's because I had to convert from grams to cups and spoons! It was totally worth it though, because it was so easy to mix up and it tasted amazing. The original recipe used just peaches and apricots, but since most recipes use cherries, I decided to add those in too! The resulting cake is a perfect celebration of summer's bounty. This dessert is super simple but looks fancy and time-consuming... add in the fact that it's French if you're wanting bonus points 😉 All you need is a sprinkle of powdered sugar and a little whipped cream on top, and you have the quintessential summer treat. Summer Fruit Clafoutis
Ingredients
- ¼ cup {½ stick} unsalted butter
- 3 eggs
- ¼ cup + 1 tablespoon brown sugar
- ⅓ cup + 2 tablespoon flour
- 2 tablespoon whole milk
- pinch of salt
- ½ teaspoon vanilla extract
- 3-4 apricots
- 2 peaches
- 1 cup cherries
Instructions
- Preheat the oven to 350F.
- Grab a 9-inch deep dish pie plate or cast iron skillet, place the butter in it, and place in the oven to melt as the oven heats.
- Wash all the fruit, remove pits, and cut into slices.
- In the bowl of a stand mixer with the whisk attachment, mix the eggs, salt, and brown sugar.
- Add in the flour and milk, and mix until smooth {batter will be runny}. Mix in the vanilla.
- Remove pan from oven, pour the butter into the batter, and combine.
- Using a pastry brush, evenly distribute the butter left in the pan to prevent sticking.
- Pour the batter into the prepared pan, and top with the cut fruit.
- Bake for 45-50 minutes, until top of cake is golden brown, and a toothpick inserted in the center comes out clean.
- Let cool slightly before cutting, and serve with powdered sugar and some whipped cream.
